Glycoprotein filament removal from human milk fat globules by heat treatment.

Freeze-etch electron microscopy was applied to milk fat globules to observe surface details. A remarkable array of filaments, approximately 0.5 micron in length, was seen on human, but not bovine, globules. Heating human globules removed the filaments that were identified as high molecular weight glycoproteins by freeze-etch and gel electrophoretic analysis of the heating medium. Extraction of these globule glycoproteins was slight at 60 degrees C for one minute but substantial and tending to plateau at 80 degrees C for one minute. Such heat-induced alterations of the milk fat globule surface provide an alternative or additional explanation to milk lipase inactivation as the cause of reduced milk fat absorption from heated milk by the preterm infant.

Background: The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) provides benefits redeemable for select healthy foods, aligned with the Dietary Guidelines for Americans, to support healthy diets among pregnant and postpartum women, and their children to age 5 years, living in low-income households. WIC benefits are often not fully redeemed, limiting nutritional benefits of participation.

In recent decades, a general increase in multiple birth (MB) rate has been reported in both dairy and dual-purpose cattle breeds. As there is evidence that MB has negative effects on economically important traits in dairy cows, the aims of this study were to (i) investigate environmental and genetic factors affecting MB rate and (ii) assess the impact of MB on productive and nonproductive traits of the Austrian dual-purpose breeds Pinzgauer and Tyrol Grey. The dataset included 99,141 calvings of 33,791 Pinzgauer and 68,454 calvings of 19,244 Tyrol Grey cows recorded from 2000 to 2022.

Some microbes in the rumen form 10,12 (10,12)-conjugated linoleic acid (CLA), a fatty acid that depresses synthesis of milk fat in dairy cattle and other lactating animals. Despite their importance to milk fat depression, the microbes responsible have been difficult to identify, and no laboratory strain is currently available for study. This work aims to evaluate the potential and limits of adhesiveness measurement using a texturometer to assess the ropiness of acid dairy gels for starter selection. Commercial yogurts of various formulations and textures were used to assess the ability of adhesiveness to detect ropiness and to compare performance of different probes. Chemically acidified gels using different concentrations of glucono-delta-lactone (GDL) were tested to determine the effect of pH on adhesiveness.
