The particle matter of wine is mainly composed of wine colloids and macromolecules. The present work develops a methodology using asymmetrical flow field-flow fractionation coupled with multi-angle light scattering, differential refractive index detector, and ultraviolet detector (AsFlFFF-MALS-dRI-UV) for the fractionation and determination of the molar mass, the hydrodynamic radius, and the apparent densities of the aggregates and macromolecules present in wine samples. The results from a set of six Argentinian high-altitude wines showed two main populations: the first population composed of wine colloids with higher UV-specific absorptivity and the second population composed of polysaccharides, such as arabinogalactans. The conformation results showed that population 1 consists of small and dense particles, while population 2 showed high molar masses and lower densities. The results demonstrated the use of AsFlFFF as a new, effective method for the fractionation and characterization of wine colloids and wine macromolecules in red wines with further potential applications.

: Vine leaves are a bulky by-product that are disposed of and treated as waste in the wine production process. In the present study polyphenols from vine leaves were extracted and simultaneously encapsulated in a new delivery system consisting of liposomes and cyclodextrins. This system was further combined with propolis polyphenols encapsulated in cyclodextrins, resulting in a colloidal suspension for the release of antioxidants in a time-controlled way, the rate of which depends on the ratio of the materials.

Hen egg-white lysozyme (HEWL) is commonly used in food preservation and as a substitute for sulfur dioxide in wine production and to prevent late blowing defects in cheese production. However, HEWL is an egg allergen that can cause severe allergic reactions in allergic individuals after accidental ingestion. Therefore, in order to prevent life-threatening health problems caused by consumer allergies, we developed an extremely specific gold immunochromatographic assay (GICA) tolerant to matrix effects for the qualification and quantification of HEWL in food products.

Photodynamic inactivation, as a safe and effective antimicrobial technology that does not damage the organoleptic properties of the food itself, decreases the use of preservatives and is gradually gaining attention in the food industry. This study selected octyl gallate (OG) as an antimicrobial photosensitizer with eucalyptus oil as the oil phase and prepared it as an octyl gallate nanoemulsion (OG-NE) to ensure the delivery of the photosensitizer. Escherichia coli and Staphylococcus aureus inactivation with the OG-NE combined with photodynamic technology, as well as the effect on the quality of food products, was investigated.

To fight counterfeits and to protect the consumer, the interest in certifying the origin of agricultural goods has been steadily growing in the last years. While numerous works focus on the finished product, an aspect often overlooked is the origin of the raw materials and the direct correlation between chemicals in the soil and the plants. With inductively coupled plasma mass spectrometry (ICP-MS) analysis, trace and ultratrace elements in Sangiovese grapes (the main component of Chianti wine) were measured and their levels were used to investigate the geographical origin of the samples.

The purpose of this study was to prepare and evaluate the formulation of nanoemulsions (NEs) to encapsulate phloretin (PT) to improve its stability, antioxidant, and tyrosinase inhibitory competence. The aim of this study was to improve the stability, antioxidant, and tyrosinase inhibitory effects of PT via NEs. The formulations were prepared using low energy emulsification method for PT-VE-NEs, α-tocopherol (Vitamin E) and medium chain triglycerides (MCT) were used as the oil phase, and Tween 60 was used as the emulsifier and PEG-400 as the co-emulsifier.
