(garlic) is widely known and is consumed as a natural prophylactic worldwide. It produces more than 200 identified chemical compounds, with more than 20 different kinds of sulfide compounds. The sulfide compounds particularly are proven to contribute to its various biological roles and pharmacological properties such as antimicrobial, antithrombotic, hypoglycemic, antitumour, and hypolipidemic. Therefore, it is often referred as disease-preventive food. Sulphur-containing compounds from are derivatives of S-alkenyl-l-cysteine sulfoxides, ajoene molecules, thiosulfinates, sulfides, and S-allylcysteine. This review presents an overview of the water-soluble and oil-soluble sulphur based phytochemical compounds present in garlic, highlighting their mechanism of action in treating various health conditions. However, its role as a therapeutic agent should be extensively studied as it depends on factors such as the effective dosage and the suitable method of preparation.

In this study, raw milk was collected from three different grades of pastures and processed by pasteurization, blending and ultra-high temperature sterilization (UHT) in a factory production line with a feed size of 10 tons. Additionally, all samples (from raw milk to UHT milk samples) were analyzed by -nose and GC-MS. Key flavor compounds such as 2-heptanone, hexanal, nonanal, 3-methyl-butanal, and dimethyl sulfide were found.

Background: Carbosulfan residues in environment is very harmful to human health. The rapid and high sensitive detection of carbosulfan residues is particularly important to guarantee human health and safety. The conventional chromatographic techniques and enzyme inhibition strategies cannot realize on-site and visual detection of carbosulfan.

Dimethoate (DIM) is one of the most extensively applied organophosphorus pesticides (OPs), which is used to boost farm productivity due to its high insecticidal efficacy. However, the excessive use of DIM can result in the extensive contamination of soil, groundwater and food. Monitoring of DIM in environmental and food samples is crucial in view of its potential health risks and environmental hazards from excessive residues.

Through extensive research, nitroxyl (HNO) has emerged as a newly recognized redox signal in plant developmental and stress responses. The interplay between nitric oxide (●NO) and HNO entails a complex network of signaling molecules and regulatory elements sensitive to the environment's specific redox conditions. However, functional implications for HNO in cell signaling require more detailed studies, starting with identifying HNO-level switches.

Static cold storage of donor livers at 4 °C incompletely arrests metabolism, ultimately leading to decreases in ATP levels, oxidative stress, cell death, and organ failure. Hydrogen Sulfide (HS) is an endogenously produced gas, previously demonstrated to reduce oxidative stress, reduce ATP depletion, and protect from ischemia and reperfusion injury. HS is difficult to administer due to its rapid release curve, resulting in cellular death at high concentrations.
