In this study, an iridium-catalyzed selective 1,4-reduction of α,β-unsaturated carbonyl compounds is realized, with water as a solvent and formic acid as a hydride donor. The new efficient iridium catalyst features a 2-(4,5-dihydroimidazol-2-yl)quinoline ligand. The chemoselectivity and catalyst efficiency are highly dependent on the electronic and steric properties of the substrates.

Oral cancer (OC) is a disease with poor prognosis mainly due to late diagnosis. There is considerable interest in the use and development of rapid, point of care (POC) non-invasive methods that can accelerate the diagnostic process. Bioimpedance (BI) is resistance to the passage of electric currents through tissue that reflects structural changes in the tissue.

To enhance the physicochemical quality, drying efficiency, and nutrient retention of dried products, this study investigated the effects of ultrasonic pretreatment on the radio frequency vacuum (RFV) drying characteristics, microstructure, and retention of natural active substances in slices. The ultrasonic time, power, and frequency were considered as experimental factors. The results showed that, compared with conventional RFV drying, ultrasonic pretreatment reduced the drying time of slices by 20-60 min.

Epidemiological and in vitro studies suggest that dietary anthocyanins in their intact form exert beneficial effects on human health. However, the potential contributions of anthocyanin metabolites to these beneficial effects have been underestimated. The objective of this review was to critically analyze the outcomes of studies concerning the formation, identification, cellular transport, and biological actions of anthocyanin metabolites generated during digestion to formulate several premises supporting the idea that these compounds largely contribute to human health.

This study investigates the effects of fermentation modification and combined modification with heat-moisture treatment (HMT) on the multiscale structure, physical and chemical properties, and quality of corn flour in the production of traditional fermented corn noodles (TFCNs). The results indicate that after fermentation modification, the starch granule size decreased while the amylopectin proportion increased. Fermentation also enhanced the relative crystallinity and short-range order of the starch, along with an increase in resistant digestion components and ester content in the noodles.
