This Mini Review gives an overview of and respective references for the production and properties of exopolysaccharides from Basidiomycota in submerged cultivation. Media and conditions that are usually applied in laboratory culture are summarized, and the lack of studies related to up-scaling is addressed. Procedures for isolation and purification of the exopolysaccharides from the fermentation media are reviewed, and challenges related to exopolysaccharide quantification are discussed. Finally, the techno-functional properties of the respective exopolysaccharides, and potential applications in foods are addressed.

Tremella fuciformis polysaccharides (TFPS) belong to natural bioactive macromolecule with both edible and medicinal value, possessing much bioactivities such as anti-tumor, antioxidant, antidiabetics, and immunomodulatory. Currently, the production of TFPS through submerged fermentation (TFPS-1) is gradually replacing the polysaccharides extracted from the fruiting body due to improved fermentation efficiency and reduced separation costs. However, it is still unclear about the effect of TFPS-1 on gastrointestinal digestion and gut microbial fermentation, which is directly related to the function of its biological activity.

Basidiomycetes, known for their production of bioactive compounds, traditionally use simple sugars for fermentation. However, their ability to degrade complex plant polysaccharides through enzyme secretion presents potential for the use of renewable raw materials. This study focused on the optimization of exopolysaccharide (EPS) production and efficient substrate consumption by Ganoderma lucidum using response surface methodology (RSM).

Polysaccharides with high mannose composition exhibit favorable antitumor activity, but there is currently a lack of well-defined and practical approaches to efficiently manufacture this type of polysaccharide. This study explores the impact of carbon utilization on exopolysaccharide (EPS) production and monosaccharide composition in Ganoderma lucidum, aiming to promote the biosynthesis of polysaccharides with high mannose composition. Sucrose supply significantly increased the mannose proportion to 35.

An increase in the number of drug-resistant microbes is a major threat to human health. Bacterial drug resistance is mostly mediated by biofilm formation. In this study, the culture filtrate from the edible mushroom, Pleurotus ostreatus, was fractionated to isolate compounds that inhibit the biofilm formation of six pathogenic bacteria.
