Purple glutinous rice bran (Kum Doi Saket rice (KUM)) contains high content of edible polysaccharides and anthocyanins and has an excellent antioxidant activity. This research aimed to optimize the extraction of crude polysaccharides from defatted purple glutinous rice bran using an ultrasonic-assisted extraction (UAE) and compared with a hot water extraction (HWE). Results showed that optimal extraction condition was as follows: a defatted rice bran to water ratio of 1:20 w/v, extraction temperature and time of 70 °C for 20 min. Under the optimal extraction condition, the yield of polysaccharide of UAE (4%) was significantly higher than that obtained from the HWE (0.8%). Additionally, antioxidant activities of extracted polysaccharide including IC value DPPH, IC value ABTS, and FRAP value were 1.09 mg/mL, 2.80 mg/mL and 197 µM Fe/g, respectively. It is suggested that the UAE process is promising method to decrease the processing time and to enhance extracted polysaccharide yields by 4 times.

High-pressure processing (HPP) enhances food safety and shelf life by inactivating microorganisms and preserving food quality, yet its effectiveness in low-humidity environments has not been evaluated. This study investigated the effects of HPP at 500 MPa for 15 min across varying hydration levels (15, 30, 60, 77 %) on rice bran (RB), aiming to identify microbial effectiveness, besides techno-functional and physicochemical properties. HPP effectively reduced mesophilic bacteria, molds and yeast of RB at > 15 % hydration level, achieving reductions of up to 4 logarithmic cycles in the latter, nearing the detection limit of the method.

Mycophenolic acid (MPA) is an immunosuppressive/antibiotic drug, biologically produced by the fermentation of Penicillium brevicompactum as its secondary metabolite using submerged (SmF) and solid-state (SSF) fermentation processes. This research aimed to produce a multifunctional bread by adding hydrothermally processed rice bran (RB), green tea extract (GTE), and rosemary extract (RE). In the first step, hydrothermal processing was used to reduce the amount of phytic acid in RB, which decreased by 55 %. Based on the acrylamide amount, texture profile analysis, and color parameters, 3 % RB was selected as the optimum concentration in the bread formulation.
