A convenient sensor is developed for electrochemical assay of Hg in dairy product using the optimal Cu-based metal-organic frameworks (Cu-MOFs) as signal reporting. Benefiting from specific recognition between Hg and thymine (T)-rich DNA strands, the interferences of milk matrices are effectively eliminated, thereby greatly improving the accuracy of test results. Moreover, the suitable Cu-MOFs offer an efficient carrier for probe design, and the contained Cu ions could be directly detected to output electrochemical signal of Hg presence without labor- or time-intensive operations. Compared with previous methods, this sensor substantially simplifies the process of electrochemical measurement and facilitates highly sensitive, selective and rapid analysis of Hg with detection limit of 4.8 fM, offering a valuable means for monitoring dairy product contamination with Hg.

Introduction: Donor human milk (DHM) is the first alternative if mother's own milk is unavailable or contraindicated. Much DHM research has focused on its nutritional, immunological and biochemical composition in response to various maternal variables, standard human milk banking procedures and storage protocols. The current systematic review protocol, however, aims to systematically gather and analyse existing data pertaining to the impact of these aforementioned factors on the clinical, health-related and developmental outcomes observed in infants fed with DHM.

Cheese-associated microbiota and their interactions are crucial in determining the properties of cheese. This study aimed to compare the effects of different starter cultures on Cheddar cheese production using texture analysis, electronic sensory evaluation, and both volatile and non-volatile metabolomics. Specifically, we examined Lactococcus lactis BL19 and Lactococcus cremoris LC99, both individually and in combination.

The demand for nondairy and plant-based products has increased, but there is still a need for more information about and improvement in these products, especially when it comes to frozen desserts. Similar to ice cream, which simultaneously is an emulsion, dispersion, and foam, nondairy frozen desserts also have a complex structure. As a starting point, 15 commercial nondairy frozen desserts, marketed as offering an ice cream-like experience, were purchased and evaluated for compositional, physical, structural, rheological, and meltdown properties.

Objective: Breastfeeding is associated with improved health outcomes in infancy and throughout adulthood as breast milk encompasses diverse immune-active factors that affect the ontogeny of the immune system in breastfed (BF) infants. Nevertheless, the impact of infant feeding on the immune system is poorly understood, and a comprehensive understanding of immune system development in human infants is lacking. In this observational study, we addressed the effects of different infant feeding approaches on cell populations and parameters in the peripheral blood of infants to gain insight into the innate and adaptive arms of the immune system.

Objectives: Methicillin-resistant Staphylococcus aureus (MRSA) is a zoonotic pathogen that poses a serious threat to veterinary and public health worldwide. We investigated mastitis milk samples for contamination with MRSA and also characterized the MRSA isolates by investigating antimicrobial resistance and virulence factors.

Result: We confirmed MRSA in 69 of 201 (34.
