Rising atmospheric [CO] has been shown to impact plant primary metabolism and the severity of head blight (FHB) in wheat. In this study, we evaluated how changes in grain nutritional content due to growth at elevated [CO] affected growth and mycotoxin production. Susceptible (Norm) and moderately resistant (Alsen) hard spring wheat grains that had been grown at ambient (400 ppm) or elevated [CO] (800 ppm) were independently inoculated with two fungal strains, which produce the trichothecene mycotoxin, deoxynivalenol. Under higher [CO], FHB-susceptible and moderately resistant wheat had disproportionate losses in protein and mineral contents, with Alsen being more severely impacted. Furthermore, the strain 9F1 had increased mycotoxin biosynthesis in response to the loss of wheat nutritional content in Alsen. Our results demonstrate that future [CO] conditions may provide a strain-specific pathogenic advantage on hosts, with greater losses in nutritional content.

The Mediterranean diet-characterized by high consumption of fruits, vegetables, whole grains, fish, and olive oil-has been widely recognized for its cardiovascular benefits and may also reduce the risk of cognitive decline and dementia.

White rot fungi can degrade lignin and improve the nutritional value of highly lignified biomass for ruminants. We screened for excellent fungi-biomass combinations by investigating the improvement of digestibility of wheat straw, barley straw, oat straw, rapeseed straw, miscanthus, new reed, spent reed from thatched roofs, and cocoa shells after colonisation by Ceriporiopsis subvermispora (CS), Lentinula edodes (LE), and Pleurotus eryngii (PE) (indicated by increased in vitro gas production [IVGP]). Background/objectives: In response to concerns about high-fat and low-fiber diets, this study modified a traditional brownie recipe by replacing butter with plant-based ingredients, including sweet potatoes, red beans, beetroot, zucchini, pumpkin, lentils, and spinach. The goal was to increase vegetable consumption while identifying the best vegetable fat replacer using sensory and instrumental analyses.
Methods: Chemical analyses were conducted to measure dry matter, protein, fat, ash, and dietary fiber, alongside texture, color, and sensory evaluations.
