Rapid prediction of beef quality remains a challenge for meat processors. This study evaluated the potential of Raman spectroscopy followed by chemometrics for prediction of Warner-Bratzler shear force (WBSF), intramuscular fat (IMF), ultimate pH, drip-loss and cook-loss. PLS regression models were developed based on spectra recorded on frozen-thawed day 2 longissimus thoracis et lumborum muscle and validated using test sets randomly selected 3 times. With the exception of ultimate pH, models presented notable performance in calibration (R ranging from 0.5 to 0.9; low RMSEC) and, despite variability in the results, promising predictive ability: WBSF (RMSEP ranging from 4.6 to 9 N), IMF (RMSEP ranging from 0.9 to 1.1%), drip-loss (RMSEP ranging from 1 to 1.3%) and cook-loss (RMSEP ranging from 1.5 to 2.9%). Furthermore, the loading values indicated that the physicochemical variation of the meat influenced the models. Overall, results indicated that Raman spectroscopy is a promising technique for routine quality assessments of IMF and drip-loss, which, with further development and improvement of its accuracy could become a reliable tool for the beef industry.

Anxi Tieguanyin belongs to the oolong tea category and is one of the top ten most famous teas in China. In this study, hyperspectral imaging (HSI) technology was combined with chemometric methods to achieve the rapid determination of free amino acid and tea polyphenol contents in Tieguanyin tea. Here, the spectral data of Tieguanyin tea samples of four quality grades were obtained via visible near-infrared hyperspectroscopy in the range of 400-1000 nm, and the free amino acid and tea polyphenol contents of the samples were detected.

State Key Laboratory of Quantum Optics and Quantum Optics Devices, Institute of Laser Spectroscopy, Shanxi University, Taiyuan, 030006, China; Collaborative Innovation Center of Extreme Optics, Shanxi University, Taiyuan, 030006, China.

The combined application of near-infrared spectroscopy (NIRS) and X-ray fluorescence spectroscopy (XRF) has achieved remarkable results in coal quality analysis by leveraging NIRS's sensitivity to organic compounds and XRF's reliability for inorganic composition. However, variations in particle size distribution negatively affect the diffuse reflectance of NIRS and the fluorescence signal intensities of XRF, leading to decreased accuracy and repeatability in predictions. To address this issue, this study innovatively proposes a particle size correction method that integrates image processing and deep learning.

Accurately detecting the anthocyanin content in eggplant peel is essential for effective eggplant breeding. The present study aims to present a method that combines hyperspectral imaging with advanced computational analysis to rapidly, non-destructively, and precisely measure anthocyanin content in eggplant fruit. For this purpose, hyperspectral images of the fruits of 20 varieties with diverse colors were collected, and the content of the anthocyanin were detected using high performance liquid chromatography (HPLC) methods.
