Tyrosinase is a key enzyme involved in melanin synthesis. Therefore, various tyrosinase inhibitors have been screened by researchers in recent years. In the present study, we discovered a novel tyrosinase inhibitor, a peptide ECGYF (named EF-5), with free radical scavenging ability. The effect of tyrosinase inhibition by EF-5 was stronger than that of arbutin and glutathione, when analyzed both (IC50: 0.46 mM) and . The UV-Vis absorption and circular dichroism spectroscopies indicated that EF-5 interacted with tyrosinase in a different way as that of glutathione. The results of molecular docking showed that the binding between EF-5 and tyrosinase was determined majorly by hydrogen bonds and hydrophobic interactions. EF-5 had also retained its ability to scavenge both hydroxyl and superoxide radicals and was found to be nontoxic to cells, as revealed by the MTT assay. These features suggested that the EF-5 peptide may serve as a safe and effective alternative as a tyrosinase inhibitor.

Novel and simple spectrophotometric and distance based procedures for thiols (L-cysteine, N-acetylcysteine, and glutathione) determination in biological fluids and pharmaceuticals have been proposed based on their inhibitory action on the oxidation of catechol in the presence of Agaricus bisporus crude extract (ABE). The influence of L-glycine, L-alanine, L-proline, L-methionine, L-cystine, ascorbic acid, uric acid, and bilirubin on the thiol determination has been investigated. Uric acid, bilirubin, L-cystine (oxidized thiol), and L-amino acids do not interfere with the determination.

In the current study, we aimed to evaluate the combined antimelanogenic effects of resveratrol- and protopanaxadiol (PPD)-enriched rice seed extracts (DJ526 and DJ-PPD) in melan-a cells. The treatment antioxidant capacity was evaluated using the ABTS radical scavenging method. TR_3 (70% [wight ()/] of DJ526 and 30% [/] of DJ-PPD) markedly increased the antioxidant activity at a level similar to that of DJ526 and DJ-PPD alone.

Most reported sensor arrays for teas were based on the sensing of phenolic hydroxyl group on tea polyphenols.
