Knowledge about the critical interfacial concentration of a protein supports our understanding of the kinetic stability of an emulsion. Its determination is currently limited to either invasive or indirect methods. The aim of our study was the determination of the critical interfacial concentration of whey protein β-lactoglobulin at oil/water-interfaces through fluorescence and pendant drop analysis and the comparison to an in situ Fourier-transform-infrared-spectroscopy (FTIR) method. Exponentially decreasing interfacial tension with increasing β-lactoglobulin content (0.10-1.00 wt%) in pendant drop analysis could partly be confirmed by fluorescence spectra. A critical interfacial concentration of 0.20-0.31 wt% β-lactoglobulin (1.80-2.69 mg/m) in oil/water (5/95)-emulsions was determined via FTIR, analyzing the Amide I/Amide II peak intensity ratio. This was confirmed by the increasing formation of intermolecular β-sheets, revealed by second derivative spectra. With this FTIR method we expand current options to investigate the interfacial behavior of food proteins by determination of secondary structure elements.

The development of an efficient and durable photoelectrode is critical for achieving large-scale applications in photoelectrochemical water splitting. Here, we report a unique photoelectrode composed of reconfigured gallium nitride nanowire-on-silicon wafer loaded with Au nanoparticles as cocatalyst that achieved an impressive applied bias photon-to-current efficiency of 10.36% under AM 1.

The phenomenon of solid dissolution into a solution constitutes a fundamental aspect in both natural and industrial contexts. Nevertheless, its intricate nature at the microscale poses a significant challenge for precise quantitative characterization at a foundational level. In this work, the influence across three specific cleavage planes, namely (100), (111), and (110) on the dissolution kinetics of fluorite in aqueous environments was examined from both experimental and theoretical standpoints.

L-Aspartic acid (L-Asp) poses a dual function, which can affect the evaporation and crystallization process of the high-salinity brine by altering the physical or chemical properties of the salts. MSWI (municipal solid waste incineration) fly ash washing leachate, as a typical high-salinity brine, is utilized here to validate this hypothesis under the simulation guidance. Since L-Asp has stronger adsorption energy on the (110) crystal face of CaCO, L-Asp can facilitate the preferential growth of more valuable vaterite during the softening process (pretreatment before crystallization).

Water-in-oil emulsions are critical in various fields, including food, agriculture, personal care, and pharmaceuticals. In some situations, spontaneous emulsification occurs in emulsions with high concentrations of oil-soluble surfactants, in which the parent water drops fragment into finer droplets, forming a network near the interface, which exhibits interfacial elasticity. This study investigates this phenomenon using a water/Span 80-paraffin oil system.
