Floral authenticity of coriander () honey samples was confirmed by melissopalynology. Effect of temperature, time and pH on quality parameters i.e. hydroxymethylfurfural (HMF) content, diastase and invertase activity of coriander honey was analysed using response surface methodology. Central composite rotatable design was adopted for optimization of process variables. An increased in HMF content was observed with increase in temperature and pH whereas diastase activity decreased with increase in temperature and with a pH value other than the optimum value of 4.6-5.6. Invertase activity was maximum at 4.8 pH. Interaction effect of temperature and pH was significant for HMF whereas interaction effect of temperature and time was significant for HMF, diastase and invertase activity. Optimization of variables was done by the mathematical method, and optimized values of HMF content, diastase, and invertase activity were obtained as 7.78 (mg/kg), 17.95 DN and 13.96 IN, respectively at 47.5 °C (temperature), 4.7 (pH) and 9 min (time).

The use of active packaging made from biodegradable polymers can contribute to the environment and to the food industry by increasing the shelf life of their products. This study aimed to produce chitosan-based films incorporated with the invertase enzyme (1, 2, 5, 9, and 10 %) as an alternative to avoid sucrose crystallization in the confectionery industry. The optimum activity of the invertase enzyme was observed at 55 °C and pH 5, thus, the films made with the film-forming solution adjusted to pH 5 and dried at 55 °C were compared with those without pH adjustment and dried at room temperature.

This study aimed to enhance inulinase production from agricultural biomass pretreated with deep eutectic solvents (DES) using Aspergillus niger A42 (ATCC 204447). Barley husk (BH), wheat bran (WB), and oat husk (OH) were selected as substrates and were pretreated using different molar ratios of choline chloride: glycerol (ChCl: Gly) and choline chloride: acetic acid (ChCl: AA). DES pretreatment was followed by dilute sulfuric acid hydrolysis.

Alternariol (AOH) has attracted much attention as an emerging toxin in edible herbs that can pose potential carcinogenic risks to human. However, the rapid detection of AOH to ensure food safety remains a challenge. Here, a CRISPR-Cas12a-mediated aptamer-based sensor (aptasensor) was proposed for the sensitive quantification of AOH by using a personal glucose meter.

Human pathogen Streptococcus pneumoniae forms multiple epigenetically and phenotypically distinct intra-populations by invertase PsrA-driven inversions of DNA methyltransferase hsdS genes in the colony opacity-determinant (cod) locus. As manifested by phase switch between opaque and transparent colonies, different genome methylation patterns or epigenomes confer pathogenesis-associated traits, but it is unknown how the pathogen controls the hsdS inversion orientations. Here, we report our finding of the SpxA1-TenA toxin-antitoxin (TA) system that regulates the orientations of hsdS inversions, and thereby bacterial epigenome and associated traits (e.
