Impairment of gut barrier integrity is associated with the pathogenesis of gastrointestinal diseases, including inflammatory bowel disease, colorectal cancer, and coeliac disease. While many aspects of diet have been linked to improved barrier function, (poly)phenols, a broad group of bioactive phytochemicals, are of potential interest. The (poly)phenolic sub-class, flavan-3-ols, have been investigated in some detail owing to their abundance in commonly consumed foods, including grapes, tea, apples, cocoa, berries, and nuts.

tea has received considerable attention due to its beneficial effects on health, particularly due to its antioxidant properties that are affected by several factors, which have a high influence on the final quality of black tea. The objective of this study was to investigate the biological properties of Azorean black tea from five different zones of tea plantation in order to select specific areas to cultivate tea rich in targeted compounds beneficial to human health. The free radical scavenging activity (FRSA), ferric reducing antioxidant power (FRAP), ferrous ion chelating (FIC) activities, total phenolic content (TPC), total flavonoid content (TFC), and tannins were determined by colorimetric methods, and catechin and theaflavin contents were analyzed by high-pressure liquid chromatography.

Rainy weather restricts the formation of high-quality Wuyi rock tea (WRT). Herein, an optimized withering process for rain-soaked leaves was developed using response surface methodology. Results showed that increasing the withering temperature, relative humidity, and withering time from 25 °C to 40 °C, 80 % to 97 %, and 3 to 6 h, respectively, effectively improved the sensory qualities of the optimized primary WRT (WRTO) prepared from rain-soaked leaves compared with those before optimization.
