A highly specific technique for estimating inulin content in natural instant chicory based on the determination of fructose after enzymatic hydrolysis with amyloglucosidase and inulinase by high-performance liquid chromatography with refractometric detection has been developed. Determination of inulin content was carried out by a system for high performance liquid chromatography Agilent 1260 Series with a refractometer, Waters Sugar-Pak column of 10 μm × 6.5 mm × 300 mm: isocratic elution mode (mobile phase - water) with a flow rate of 0.5 ml/min, column temperature - 80 °C, injected sample volume - 10 μl. Inulin content in samples of soluble natural chicory ranges from 4 to 25%. It has been shown that the developed technique can be applied in the quality control of products used for the preparation of soluble natural chicory beverages.

Plant protein-stabilized Pickering nanoemulsions show potential as plant-based milk substitutes; however, their stability is challenged by mechanical stress during transportation and oxidative deterioration during storage. Herein, soybean isolate protein-curcumin composite nanoparticle (SPI-Cur-NPs)-stabilized Pickering nanoemulsions were converted into microcapsule powders via spray-drying with maltodextrin (MD), trehalose anhydrous (TA), and inulin (IN) as wall materials. Robust intermolecular hydrogen bonds and an amorphous structure were formed using composite wall materials, reducing microcapsule surface fissures while improving encapsulation rate (92.

Objectives: Inulin is a plant polysaccharide that may affect the gut barrier depending on its degree of polymerization (DP). Therefore, this study aimed to determine the effect of dietary level of two inulin types differing in DP on mucin content and MUC gene expression in the colon mucosa of pigs.
Methods: The 40-d experiment involved 56 piglets divided into seven groups fed a diet with 0%, 1%, 2%, or 3% inulin with DP of 10 or 23.

Osmotic dehydration as a process of removing water from food by immersing the raw material in a hypertonic solution is used primarily to extend the shelf life of products and as a pretreatment before further processing steps, such as drying and freezing. However, due to the bi-directional mass transfer that occurs during osmotic dehydration, the process can also be used to shape sensory properties and enrich the plant matrix with nutrients. The purpose of this study was to evaluate the effect of osmotic dehydration on the absorption of potassium by beet pulp immersed in various hypertonic solutions (sucrose, inulin, erythritol, xylitol solutions) with the addition of three chemical forms of potassium (gluconate, citrate, chloride) using variable process conditions.

Foods and beverages with health benefits have become increasingly popular with consumers, and fruits and legumes are considered good sources of nutrients. In this study, sea buckthorn and fava bean were used as the main raw materials to prepare sea buckthorn-fava bean composite instant powder (S-FCP). Different drying methods (spray-drying (SD) and freeze-drying (FD)) combined with carriers (maltodextrin (MD) and inulin (INU)) were involved to investigate their effects on physicochemical properties, functional properties, and sensory attributes of instant powder.

This study aimed to investigate the effects of ultrasonic treatment time (5-30 min) on the structural characteristics, antioxidant, α-amylase inhibitory, and prebiotic properties of pomegranate peel pectin (PPP). The extracted PPP was rich in galacturonic acid (64.27 %) and exhibited a high degree of esterification (DE, 61.
