Article Abstract

Collagen is a natural one-dimensional nanomaterial. Multi-walled carbon nanotubes (MWNTs) have been previously shown to interact with biomolecules and to have promising applications in reinforced biopolymers for tissue engineering and regenerative medicine. In this work, collagen/MWNT composite fibers are prepared using dry-jet wet-spinning technology. Three types of MWNTs with aspect ratios of 40, 150, and 4000 are used to investigate the effects of the MWNT aspect ratio on the properties of the composite fibers. There results show that there are strong molecular interactions between the MWNTs and collagen molecules. The mechanical properties and thermal stability of the composite fibers are significantly improved compared to those of the collagen fibers. The diameter and aspect ratio of the MWNTs are the main factors affecting the self-assembled structure of the collagen molecules, the alignment of the microfibrils, and the mechanical and thermal performance of the composite fibers.

This study aims to develop rapid and non-invasive methods based on near-infrared hyperspectral imaging and chemometrics for quantitative prediction of chemical compositions of pea-derived products. Hyperspectral imaging was used to acquire images from pea processing streams, namely pea flour, pea protein concentrate, and pea protein isolate. The PLS algorithm was used to develop quantitative prediction models based on the relationship between the hyperspectral image data and the chemical compositions of the pea products, including moisture, protein, ash, insoluble fiber, and total starch.

Polycyclic aromatic hydrocarbons (PAHs) are carcinogenic compounds resulting from incomplete burning of organic materials. This work describes the successful layer-by-layer fabrication of a novel zinc oxide nanocomposite made of zinc oxide nanoparticles, aniline, sodium dodecyl sulfate, and modified multi-walled carbon nanotubes on a stainless steel wire by electrodeposition. The coating and extraction conditions were screened, optimized, and validated using factorial design and central composite design, respectively.

Metabolic syndrome is a cluster of risk factors, including abdominal obesity, insulin resistance, hypertension, dyslipidemia (intended as an increase in triglyceride levels and a reduction in HDL cholesterol levels), and elevated fasting glucose, that increase the risk of cardiovascular disease and type 2 diabetes. With the rising prevalence of metabolic syndrome, effective dietary interventions are essential in reducing these health risks. The Mediterranean diet, rich in fruits, vegetables, whole grains, legumes, nuts, and olive oil and moderate in fish and poultry, has shown promise in addressing metabolic syndrome and its associated components.

Background/objectives: Diet composition is important for health, especially during critical periods such as pre-gestation (P), gestation (G), or lactation (S), due to its potential impact not only on the mother but on the offspring. The Mediterranean diet includes many healthy foods rich in fiber and/or polyphenols, such as whole grains, fruits, vegetables, beans, and nuts. The present preclinical study assesses the impact of a diet rich in fiber and polyphenols (HFP diet) during one of those three periods (P, G, or S, three weeks each) on the rat gene expression of the small intestine obtained at the end of the lactation period.
