A simple and facile strategy for the creation of ferric tannin microcapsules around a liquid, non-sacrificial core is described. The assembly of the capsules occurs rapidly once ferric tannin complexes are subjected to ultrasonic treatment. The driving forces for the rapid capsule assembly reside in the strategy of adding ferric ions into the initial emulsion, which promotes shell formation and stability through well-known complexation effects. This is the first time that microcapsule assemblies of monomeric tannins like epigallocatechin-3-O-gallate has been demonstrated, which are reportedly unable to form dispersing microcapsules in the absence of a templating metal. The efficacy of the approach is demonstrated by the complete release of a hydrophobic molecule that is active against M. tuberculosis by using Acacia tannin capsules. The release kinetics of the active molecule were of zeroth order over a 12 h time frame.

tea has received considerable attention due to its beneficial effects on health, particularly due to its antioxidant properties that are affected by several factors, which have a high influence on the final quality of black tea. The objective of this study was to investigate the biological properties of Azorean black tea from five different zones of tea plantation in order to select specific areas to cultivate tea rich in targeted compounds beneficial to human health. The free radical scavenging activity (FRSA), ferric reducing antioxidant power (FRAP), ferrous ion chelating (FIC) activities, total phenolic content (TPC), total flavonoid content (TFC), and tannins were determined by colorimetric methods, and catechin and theaflavin contents were analyzed by high-pressure liquid chromatography.

The current study was conducted to explore the phytochemical composition and in vitro antioxidant activity of Moringa oleifera leaves aqueous extract (MOLE), as well as its in vivo modulatory effects on abamectin (ABM)-induced oxidative stress in rat erythrocytes and brain tissue. Following extraction, the total phenolic, flavonoid, condensed tannin and ortho-diphenolic contents of MOLE were determined. High-performance liquid chromatography (HPLC) analysis allowed the identification and the quantification of 12 bioactive compounds: gallic acid, chlorogenic acid, caffeic acid, vanillic acid, quercetin, ferulic acid, ascorbic acid, alizarin, hesperidin, neohesperidin, resveratrol, and naringin.

Raisin can be used a substitution of artificially sweetened snacks/ingredients, in order to counteract the increasing consumption of sugar-added foods, which is associated to adverse health effects. The aim of this study was to investigate the phenolic content, reducing capacity and antiglycation activities of traditional, sun-dried raisin samples obtained from six Tunisian varieties. Total phenolics were determined by the Folin Ciocalteu assay, proanthocyanidins by depolymerisation with n-butanol/HCl, monomeric and dimeric flavanols, flavonols and anthocyanins by HPLC with diode array and fluorimetric detectors.
