Article Abstract

Background: The aim of this study was to investigate consumer perception of ionic beverage consumption by young children as a potential link to their excessive use.

Methods: We studied parents' awareness of ionic beverages and the current pattern of use in their young children using a self-administered questionnaire.

Results: A total of 424 responses were recorded. Approximately 25-33% of parents believed that ionic beverages are good for health and rich in nutrients and vitamins, but, only 5.9% of the parents agreed with the statement that ionic beverages are safe to consume in large quantities. Regarding their use, 11 children (2.6%) were drinking ionic beverages every day or several times a week. The parents of these children were classified into the frequent use group. The rates at which parents agreed with statements that ionic beverages are good for health and rich in vitamins were higher in the frequent use group than in controls.

Conclusion: Parental awareness of ionic beverages, and current consumption patterns in their young children are generally good. Having a positive opinion about the benefits of ionic beverages was associated with excessive consumption.

Departamento de Química, Área de Química Analítica, Facultad de Ciencias, Universidad de La Laguna (ULL), Avenida Astrofísico Francisco Sánchez s/n, 38206 San Cristóbal de La Laguna, Tenerife, Spain.

In this work, two novel (-)-menthol-based hydrophobic natural eutectic solvents with vanillin and cinnamic acid were prepared and applied as extraction solvents. In this regard, 12 endocrine disruptors, including phenol, 2,4-dimethylphenol, 2,3,6-trimethylphenol, 4--butylphenol, 4--butylphenol, 4--amylphenol, 4--hexylphenol, 4--octylphenol, 4--heptylphenol, 4--octylphenol, and 4--nonylphenol and bisphenol A, were studied in a green tea drink. A temperature-controlled liquid-liquid microextraction was used as the extraction method, and nano-liquid chromatography-ultraviolet detection was used as the separation and determination system.

Enhancement of soy protein functionality by conjugation or complexation with polysaccharides or polyphenols: A review.

Compr Rev Food Sci Food Saf

State Key Laboratory of Food Science and Resources, Jiangnan University, School of Food Science and Technology, Collaborative innovation center of food safety and quality control in Jiangsu Province, Jiangnan University, Wuxi, China.

Soy proteins have good nutritional quality and exhibit a range of useful functional attributes, making them a viable option for replacing animal proteins in the development of more sustainable and eco-friendly plant-based food products. Nevertheless, soy proteins are prone to denaturation and/or aggregation under conditions they encounter in some food and beverage products (including certain pH, ionic, and thermal conditions), which adversely impact their functional performance. This problem can often be overcome by covalently (conjugation) or noncovalently (complexation) linking the soy proteins to polysaccharides or polyphenols, thereby expanding their application scope.

Impact of food additives (sodium carbonate and ammonium bicarbonate) on interactions between astringent compounds and an oral cell model.

Many foods contain additives like sodium carbonate and ammonium bicarbonate to ensure safety, preserve quality, or extend shelf life. Recent studies suggest these additives may influence interactions between astringent compounds and oral cells. Using a tongue epithelium cell model, we investigated how these salts affect interactions between astringent compounds (phenolic and non-phenolic) and oral constituents.

Ionic liquid-grafted activated carbon for selective removal of PFAS by adsorption in drinking water.

Department of Civil and Environmental Engineering, Seoul National University, Seoul, 08826, Republic of Korea; Institute of Construction and Environmental Engineering, Seoul National University, Seoul, 08826, Republic of Korea. Electronic address:

Hydrophobic interaction and anion exchange are major adsorption mechanisms of per- and poly-fluoroalkyl substances (PFAS) for most adsorbents. Activated carbon (AC) primarily adsorbs PFAS through hydrophobic interactions, but its removal efficiency decreases in drinking water treatment plants (DWTP) due to competition from other water constituents. To address this challenge, we grafted hydrophobic ionic liquids (ILs) onto AC, producing hydrophobic adsorbents with PFAS-selective anion exchange sites.

N-nitrosodimethylamine (NDMA) was determined using a molecularly imprinted polymer (MIP)-based electrochemical sensor. Green-synthesized silver nanoparticles were functionalized with cysteamine to enhance their integration into the electrode surface, which was used to modify a glassy carbon electrode (GCE). Furthermore, a MIP-based electrochemical sensor was constructed via electropolymerization of 3-aminophenyl boronic acid (3-APBA) as a conjugated functional monomer in the presence of lithium perchlorate (LiClO) solution as a dopant, chitosan as a carrier natural polymer, and NDMA as a template/target molecule.
