The present data concern the structuring kinetics of aqueous high methoxyl pectin (HMP) solutions at acid pH (3.1), constant pectin concentration (0.2% w/w) and sucrose concentrations ranging from 56 to 65% w/w. Consecutive frequency sweep was applied to samples immediately after their preparation. The generalized Maxwell (gM) model was used to describe the change of the mechanical spectra for each different sucrose concentration and to determine the viscoelastic parameters controlling the gelation of the HMP solutions. The viscosities in the sol region are explored in the range 0 to 55% 0 to 40% (w/w) sucrose concentration.

Since therapeutic options are limited the utilization of prebiotics is suggested to prevent food allergies (FAs). Pectin-based silver nanoparticles (AgNPs) have been used in the field of antibacterials for food due to their excellent antibacterial properties. The restrictions on excessive use of antimicrobials in the poultry industry have led to the search for alternative strategies including nutritional interventions to enhance gut health with the ultimate aim to prevent gut infections. Pectins as prebiotics have shown beneficial effects on gut health in humans and mice by improving the gut barrier function, altering the gut microbiota, and by modulating the gut immune response. In recent years, the mechanism concerning fluorescence can be modulated by intramolecular charge transfer (ICT) effect has been widely used in the creation of ratiometric fluorescent probes. However, on this basis, further studies on the structure-activity relationship between molecular constitution of probes and their photophysical characteristics, as well as sensing performance remained less comprehensive. In this work, with triphenylamine (TPA) and methylthio as typical fluorophore and recognition groups respectively, an ICT-based hypochlorite (ClO) fluorescent probe named Probe A was initially constructed, and then through ingenious molecular design, the second probe defined as Probe B was successfully prepared by introducing methoxyls as electron donors.
