Darkening processed fruits and vegetables is caused mainly by enzymatic browning through polyphenol oxidase (PPO) action. Accordingly, we explored the potential of four silica-based materials (MCM-41 nanometric size, MCM-41 micrometric size, UVM-7 and aerosil), non-functionalised and functionalised with thiol groups, to inhibit PPO activity in the model system and apple juice. All materials showed relevant performance when immobilising and inhibiting PPO in model systems, and support topology is a main factor for enzyme immobilisation and inhibition. Thiol-containing silica UVM7-SH showed the greatest inactivation, and similar browning values to those obtained by acidification. The enzyme's kinetic parameters in the presence of UVM-7-SH suggested non-competitive inhibition, which indicated that the material interacted with the enzyme, but beyond the active centre. In real systems, UVM-7-SH completely inhibited enzymatic browning in apple juice (cv. Granny Smith and cv. Golden Delicious) up to 9days after 5min of contact.

Frost damage to apple flowers significantly affects both the quality and yield of apples, potentially leading to substantial economic losses. This study investigates the application of the environmentally friendly plant hormone 24-epibrassinolide (EBR) on apple flowers to assess its effects under frost stress conditions. The color and aroma of nectarines experience adverse effects from cutting, resulting in the fast senescence of fruit tissue. Therefore, 1-methylcyclopropene (1-MCP) was used to treat postharvest nectarines before cutting, and its effect on the surface browning and aroma alteration were investigated. The results indicated that 1-MCP restrained the soluble quinone (SQC) accumulation in fresh-cut nectarines by regulating the peroxidase (POD) and polyphenol oxidase (PPO) activities and the metabolism of phenolic compounds.

This study investigates the presence of active olive polyphenol oxidase (OePPO) in freshly extracted extra virgin olive oil (EVOO) and its role in triggering enzymatic browning during EVOO storage. OePPO's presence in EVOO was validated through its distinct molecular weights observed in SDS-PAGE gels. The generation of quinones in EVOO was tracked spectrophotometrically over a storage period of one month, revealing browning reactions, particularly in the early days of storage, followed by a decline concurrent with water sedimentation.
