Pediococcus pentosaceus PC39 was grown in batch culture on selected hexoses and pentoses. The spent culture medium was analyzed by high performance liquid chromatography. Neither hexose metabolism nor pentose metabolism resulted in end-product patterns normally predicted for this organism based on its traditional classification. In general, the total amount of by-products, particularly ethanol, was unexpectedly high.
