Nanoemulsified D-Limonene Reduces the Heat Resistance of Salmonella Senftenberg over 50 Times.

Senftenberg is a pathogen agent causative of foodborne disease and it is considered the most heat-resistant serovar within this genus. Food industries use heat treatment and chemical antimicrobials in order to eliminate this microorganism in food, but consumers prefer natural antimicrobials as essential oils and their components. This study evaluates the combined effect of thermal treatments and different concentrations of -limonene nanoemulsion on the inactivation of () Senftenberg. The results showed an important effect of the nanoemulsified -limonene on the heat resistance of Senftenberg. The δ value was reduced by 85%, 96% and 98% when 0.1, 0.5 and 1 mM of nanoemulsified -limonene was added to the heating medium. The effect was kept along all the heating temperatures researched and the shape of the survival curves did not change with the addition of the antimicrobial. The results obtained in this research could be very useful for food industries for optimizing or improving heat treatments applied to food.

Immobilizing enzymes onto solid supports having enhanced catalytic activity and resistance to harsh external conditions is considered as a promising and critical method of broadening enzymatic applications in biosensing, biocatalysis, and biomedical devices; however, it is considerably hampered by limited strategies. Here, a core-shell strategy involving a soft-core hexahistidine metal assembly (HmA) is innovatively developed and characterized with encapsulated enzymes (catalase (CAT), horseradish peroxidase, glucose oxidase (GOx), and cascade enzymes (CAT+GOx)) and hard porous shells (zeolitic imidazolate framework (ZIF), ZIF-8, ZIF-67, ZIF-90, calcium carbonate, and hydroxyapatite). The enzyme-friendly environment provided by the embedded HmA proves beneficial for enhanced catalytic activity, which is particularly effective in preserving fragile enzymes that will have been deactivated without the HmA core during the mineralization of porous shells.

Monogalactosyldiacylglycerol (MGDG), as the primary lipid component of thylakoid membranes, has a significant part in plant growth and stress response. The current study employed two transgenic wheat lines (MG1516 and MG1314) overexpressing the MGDG synthase gene (TaMGD) and wild-type cv "JW1" to explore the function of TaMGD in response to high temperature stress during the anthesis stage of wheat. Under high-temperature stress, the overexpressed wheat lines exhibited higher grain weight, increased antioxidant enzyme activity, and lower HO and malondialdehyde contents in leaves.
