Aroma results from the interplay of volatile organic compounds (VOCs) and the attributes of microbial-producing aromas are significantly affected by fermentation conditions. Among the VOCs, only a few of them contribute to aroma. Thus, screening and identification of the key VOCs is critical for microbial-producing aroma. The traditional method is based on gas chromatography-olfactometry (GC-O), which is time-consuming and laborious. Considering the Tuber melanosporum fermentation system as an example, a new method to screen and identify the key VOCs by combining the aroma evaluation method with principle component analysis (PCA) was developed in this work. First, an aroma sensory evaluation method was developed to screen 34 potential favorite aroma samples from 504 fermentation samples. Second, PCA was employed to screen nine common key VOCs from these 34 samples. Third, seven key VOCs were identified by the traditional method. Finally, all of the seven key VOCs identified by the traditional method were also identified, along with four others, by the new strategy. These results indicate the reliability of the new method and demonstrate it to be a viable alternative to the traditional method.

Objectives: To understand the epidemic characteristics of various SARS-CoV-2 variants, we mainly focus on analyzing general epidemic profiles, viral mutation, and evolution of COVID-19 outbreaks caused by different SARS-CoV-2 variants of concern (VOCs) in China as of August 2022.
Methods: We systematically sorted out the general epidemic profiles of outbreaks caused by various SARS-CoV-2 VOCs in China, compared the differences of outbreaks caused by Delta and Omicron VOCs, and analyzed the mutational changes of subvariants between the same outbreak and different outbreaks.
Findings: By 15 August 2022, a total of 2, 33, and 124 COVID-19 outbreaks caused by Alpha, Delta, and Omicron VOCs, respectively, were reported in different regions of China.

In this study, the dynamic effects of ultrasonic treatment (0-400 W) on the volatile flavor compounds of pumpkin juice under different storage periods were investigated systematically using a combination of headspace solid-phase microextraction gas chromatography-mass spectrometry (HS-SPME-GC-MS) and gas chromatography-ion mobility spectrometry (GC-IMS) techniques. A total of 139 and 46 volatile organic compounds (VOCs) were identified by GC-MS and GC-IMS, respectively. The results indicated that complex changes in volatile components occurred during storage.

Peptides, due to their diverse and controllable properties, are used as both liquid and gas phase recognition elements for both biological and chemical targets. While it is well understood how binding of a peptide to a biomolecule can be converted into a sensing event, there is not the same mechanistic level of understanding with regard to how peptides modulate the selectivity of semiconductor/conductor-based gas sensors. Notably, a rational, mechanistic study has not yet been performed to correlate peptide properties to the sensor response for volatile organic compounds (VOCs) as a function of chemical properties.

To analyze the emission characteristics of VOCs from pesticide use sources in Beijing, the distribution of commonly used pesticides and dosage forms in Beijing was obtained through on-site research, and the VOC content of pesticides in different dosage forms was examined using laboratory testing methods. The emission factors of pesticide VOCs for localized dosage forms in Beijing were established, an inventory of pesticide use source VOCs was compiled, and the spatial and temporal distribution characteristics of pesticide use source VOCs were analyzed. The results indicated that ① Pesticide dosage forms were the main factors affecting the emission of VOCs from pesticides, and when accounting for VOC emissions from pesticide sources, it is necessary to know the types of pesticides and active ingredients in the target area and obtain information on pesticide dosage forms simultaneously.
