The effect of modulating the gelatinisation extent by hydration (50/50 and 80/20 water to starch ratio) and temperature (65 or 85 °C) on various properties of wheat starch in presence of flavours has been studied. The hydrothermal treatments resulted in samples with different properties. The lowest residual flavour content was found in samples treated at the highest hydration and temperature (85 °C) while the other treatment conditions led to samples with similar residual flavour content. Ethyl hexanoate significantly increased the characteristic pasting viscosities compared to starch±2-hexanone; suggesting a greater structuration with ethyl hexanoate. Heating starch in excess water caused amylopectin melting, but promoted an incomplete granular swelling as revealed by RVA. This study suggested that lowering the hydration upon treatment could limit both crystal melting (with a residual crystalline content up to 38% in the most extreme conditions) and granular swelling but increased granule organisation like following annealing.

A series of carbazolylpyridine ()-based 6/5/6 Pt(II) complexes featuring tetradentate ligands with nitrogen or oxygen atoms as bridging groups was designed and synthesized, and the bridging nitrogen atoms were derived from acridinyl (Ac), azaaceridine (AAc) and carbazole (Cz). Systematic experimental and theoretical studies reveal that the ligand structures have a significant effect on the electrochemical, photophysical and excited state properties of these complexes. Their oxidation processes mainly occur on the carbazole-Pt moieties, whereas the reduction processes typically occur on the electron-deficient pyridine (Py) moieties.

-site cation ordering in double perovskites is crucially important for their physical properties. In this study, polycrystalline samples of Zr-based double perovskite NaLaZrO were synthesized via high-temperature solid-state reactions, and the influence of the heating temperature and cooling rate on their crystal structures was investigated using synchrotron X-ray diffractometry and optical second harmonic generation. The samples prepared at 1200 °C, followed by slow cooling to room temperature, crystallize in a polar 2 structure, exhibiting partial -site cation ordering, with Na- and La-rich -site layers alternately stacked along the axis.

To meet the increasing demand for wearable sensor in special environment such as low temperature or underwater, a multifunctional ionic conducting hydrogel (Gel/PSAA-Al hydrogel) with anti-freezing and low swelling for human motion detection and underwater communication was prepared using gelatin (Gel), [2-(methacryloyloxy) ethyl] dimethyl-(3-sulfopropyl) ammonium hydroxide (SBMA), acrylamide (AAm), acrylic acid (AAc), and AlCl. Due to reversible hydrogen bonding, electrostatic interactions and metal coordination crosslinking between the polymer networks, the resulting Gel/PSAA-Al hydrogels present low swelling property in water and exhibit large tensile properties (~1050 %), high tensile strength (~250 kPa) and excellent fatigue resistance.
