Dieckol is a brown algal phlorotannin with potent bioactivities such as hepatoprotective effects. This study aimed to produce dieckol-rich extract from Eisenia bicyclis and apply them as a functional ingredient for a novel bacterial cellulose (BC)-based dessert. The modeling and optimization of the ultrasound-assisted extraction (UAE) process were performed.

Over the last decades, eating habits have shifted towards convenient foods with shorter preparation times due to people's busy lifestyles and higher living standards. Rapid changes in dietary patterns and lifestyles with the industrialization and globalisation have led to the escalating incidence of chronic diseases, which has paved the way to greater interest in dietary changes regarding nutritional status and health benefits. Composite flour is a combination of wheat and non-wheat flours or exclusively non-wheat flour with improved nutritional value, therapeutic properties and functional characteristics.

protein design has advanced such that many peptide assemblies and protein structures can be generated predictably and quickly. The drive now is to bring functions to these structures, for example, small-molecule binding and catalysis. The formidable challenge of binding and orienting multiple small molecules to direct chemistry is particularly important for paving the way to new functionalities.

Introduction: Heritage sites often pose significant accessibility challenges for individuals with visual disabilities due to their preserved architectural features and strict regulations against modifications. In shared streets, designed to encourage pedestrian use and reduce vehicle dominance, these challenges are exacerbated by the lack of tactile and directional cues for visually impaired users. This study, set in the context of Canadian heritage sites, explores how shared streets can be adapted to be more inclusive while respecting the integrity of historical environments.
