We examined acute toxicity and radioprotective activity of inorganic (calcium selenites, manganese, strontium and lanthanum) and organic selenium compounds. Results from animal experiments indicate that some of the organic selenium compounds are protective against ionizing radiation and promising as radioprotective agents. The time required to achieve the maximum radioprotective activity for selenium compounds depends on the degree of oxidation. Optimal duration of prophylactic administration of drugs with a degree of oxidation of Se+4 is 24 hours, and Se+2--1 hour. The radioprotective mechanism of selenium may be associated with the antioxidant properties.

Selenium (Se) is important and plays significant roles in many biological processes or physiological activities. Prolonged selenium deficiency has been conclusively linked to an elevated risk of various diseases, including but not limited to cancer, cardiovascular disease, inflammatory bowel disease, Keshan disease, and acquired immunodeficiency syndrome. The intricate relationship between selenium status and health outcomes is believed to be characterized by a non-linear U-shaped dose-response curve.

Sprouts and microgreens which belong to the Brassicaceae family contain significantly more glucosinolates than mature vegetables, and their composition often differs too. These plant growth stages can be a valuable supplement of the aforementioned compounds in the diet. The content and proportion of individual glucosinolates in sprouts and microgreens can be regulated by modifying the length and temperature of cultivation, the type of light, the use of mineral compounds, elicitation, primming, and cold plasma as well as storage conditions.

Cadmium (Cd) is a highly toxic heavy metal contaminant found in soil and water due to human activities such as mining and industrial discharge. Cd can accumulate in the body, leading to various health risks such as organ injuries, osteoporosis, renal dysfunction, Type 2 diabetes (T2DM), reproductive diseases, hypertension, cardiovascular diseases, and cancers. The gut is particularly sensitive to Cd toxicity as it acts as the primary barrier against orally ingested Cd.

Selenium (Se), a critically essential trace element, plays a crucial role in diverse physiological processes within the human body, such as oxidative stress response, inflammation regulation, apoptosis, and lipid metabolism. Organ fibrosis, a pathological condition caused by various factors, has become a significant global health issue. Numerous studies have demonstrated the substantial impact of Se on fibrotic diseases.

Polyphenols have potent antioxidant properties, but are easily degraded in the gastrointestinal tract, greatly limiting their application as dietary supplements. Therefore, the composition changes of lotus seedpod oligomeric procyanidins (LSOPC) in the gastrointestinal digestion, colonic fermentation and their absorption in Caco-2 cell monolayer were studied. The extracted LSOPC were identified using UPLC-Q-Exactive/MS, and a total of 47 compounds were identified.
