Prevalence of partially hydrogenated oils in US packaged foods, 2012.

Although there is evidence that consumption of trans fat has declined in the United States, limited documentation exists on current levels of industrial trans fat in foods. We estimated the prevalence of partially hydrogenated oils in 4,340 top-selling US packaged foods. Nine percent of products in the sample contained partially hydrogenated oils; 84% of these products listed "0 grams" of trans fat per serving, potentially leading consumers to underestimate their trans fat consumption. Government efforts to eliminate partially hydrogenated oils from packaged foods will substantially reduce exposure to this known cardiovascular disease risk factor.

Food freshness monitoring and volatile amine detection are key to food safety. In this study, we demonstrated the applicability of mixed-valence rhenium oxide quantum dots (MV-ReOQDs), synthesized via the hydrothermal reaction of α-cyclodextrin and rhenium ion precursors, in triethylamine (TEA) sensing. Spectroscopic correlation techniques showed that the developed MV-ReOQDs possessed mixed-valent rhenium, α-cyclodextrin as capped ligand, partially carbonized surface, and amorphous phase structure.

Metal carbides with earth-abundant elements are widely regarded as promising alternatives of noble metal catalysts. Although comparable catalytic performances have been observed for metal carbides in several types of reactions, precise control of reaction pathways on them remains a formidable challenge, partially due to strong adsorption of reactants or intermediates. In this study, we show that bimolecular dehydrogenation of methanol to methyl formate and H2 is kinetically favored on bare α-MoC catalysts, while monomolecular dehydrogenation to CO and H2 becomes the dominant pathway when α-MoC is decorated with crowding atomic Ni species.

Dietary intakes of trans fatty acids before the prohibition of partially hydrogenated oils in Canada.

Purpose: Canada's public health objective is that ≥ 90% of the population consume <1% of total energy (< 1%En) as trans fatty acids (TFA), in line with World Health Organization recommendations. Our study aimed to estimate usual intakes of total TFA, industrially-produced TFA (i-TFA), and naturally occurring TFA (n-TFA) overall and in subgroups of the population before Canada's 2018 prohibition on the use of partially hydrogenated oils (PHO) in foods.

Methods: Data from 1-2 24-h recalls was available for 19,670 participants in the cross-sectional Canadian Community Health Survey (CCHS)-Nutrition 2015.
