Despite considerable progress in medical research, cancer is still one of the high-ranking causes of death in the world. It is the second most common cause of death due to disease after heart disease, and according to World Health Organization it will be the cause of death for more than 10 million people in 2020; therefore, one of the main research goals for researchers investigating new anticancer agents. But the major complication for the cancer cure without surgeries is side effects. Especially, cytotoxic anticancer chemotherapeutic agents generally produce severe side effects, while reducing host resistance to cancer and infections. Therefore, it is important to find new, powerful anticancer agents that are highly effective, biodegradable, and biocompatible. Chitin and chitosan are biopolymers which have unique structural possibilities for chemical and mechanical modifications to generate novel properties, functions. These biopolymers are biocompatible, biodegradable, and nontoxic, and their chemical properties allow them to be easily processed into gels, sponges, membranes, beads, and scaffolds forms also. Due to their unique properties, they are excellent candidates for cancer cure or cancer diagnosis.

Significant agro-industrial waste is produced during the winemaking process, including grape stalks, which are a rich source of the valuable biopolymer holocellulose that can be utilized for biotechnological processes. The purpose of this study was to delignify grape stalks in order to extract holocellulose. Then Lactobacillus plantarum (LP) was immobilized in the interstitial spaces of holocellulose and then coated with natural polymers (chitosan, Ch; and alginate, Al) to create the Holo-LP/Ch/Al complex.

Chitosan, a multifaceted amino polysaccharide biopolymer derived from chitin, has extensive antibacterial efficacy against diverse pathogenic microorganisms, including both Gram-negative and Gram-positive bacteria, in addition to fungi. In this study, we prepared a new multi-functional intelligent hydrogel preservation film using soy hull nanocellulose (SHNC), polyvinyl alcohol (PVA), chitosan (CS), and anthocyanin (Anth) as raw materials. The physicochemicals of the hydrogel preservation film, and its role in monitoring the freshness and freshness of salmon was evaluated. The results showed that the monomers were crosslinked by hydrogen, ester bonds, and electrostatic interactions in the hydrogel film, and there were three-dimensional pores in the hydrogel film.

In this study, octenyl succinic acid sodium starch (OSAS) decorated with chitosan (CS) of different molecular weights (50-150 kDa) and concentrations (10-30 mg/mL) was used to stabilize an emulsion coencapsulating with vitamin A (V) and vitamin D (V). The effect of CS decoration on the thermal and UV stability of the emulsion, as well as the underlying mechanism, was elucidated. The incorporation of CS increased the retention rates of V and V by 11.
