A new method for the determination of selenium based on its fluorescence quenching on the hemoglobin-catalyzed reaction of H2 O2 and l-tyrosine has been established. The effect of pH, foreign ions and the optimization of variables on the determination of selenium was examined. The calibration curve was found to be linear between the fluorescence quenching (F0 /F) and the concentration of selenium within the range of 0.16-4.00 µg/mL. The detection limit was 1.96 ng/mL and the relative standard deviation was 3.14%. This method can be used for the determination of selenium in Se-enriched garlic bulbs with satisfactory results.

Background: This study aimed to assess possible changes in mineral intake correlation between family pairs over time. Mineral intake was measured using a food frequency questionnaire.
Methods: FCOR command of the Statistical Analysis for Genetic Epidemiology software was used to determine the correlation coefficients of minerals in relative pairs.

Background: Recent advances in nanomedicine have derived novel prospects for development of various bioactive nanoparticles and nanocomposites with significant antibacterial and antifungal properties. This study aims to investigate some characteristics of the novel Se-NPs/CuO nanocomposite such as morphological, physicochemical, and optical properties, as well as to assess the antibacterial activity of this fabricated composite in different concentrations against some MDR Gram-positive and Gram-negative clinical bacterial isolates.
Methods: The Se-NPs/CuO nanocomposite was fabricated using the chemical deposition method.

Soil serves as a significant reservoir of selenium (Se) and plays a crucial role for the entry of Se into the food chain. Therefore, it is of utmost importance to gain a deep understanding of the spatial and temporal variation of total soil Se content in China, as well as its influencing factors. This understanding is essential for the rational and efficient utilization of Se resources, the maintenance of ecological balance, and the preservation of human health in the future.

Hyperlipidemia, a major risk factor for cardiovascular diseases, can potentially be alleviated by dietary antioxidants. This study explored the relationship between hyperlipidemia and the Composite Dietary Antioxidant Index (CDAI), which measures antioxidant intake from carotenoids, selenium, zinc, and vitamins A, C, and E. Analyzing data from 27,493 participants aged 20 and older from the National Health and Nutrition Examination Survey (NHANES) conducted between 2001 and 2018, we used weighted regression models to assess this association while adjusting for multiple covariates.

Polyphenols have potent antioxidant properties, but are easily degraded in the gastrointestinal tract, greatly limiting their application as dietary supplements. Therefore, the composition changes of lotus seedpod oligomeric procyanidins (LSOPC) in the gastrointestinal digestion, colonic fermentation and their absorption in Caco-2 cell monolayer were studied. The extracted LSOPC were identified using UPLC-Q-Exactive/MS, and a total of 47 compounds were identified.
