The aim of this study was to evaluate physical and sensory characteristics of low-sodium tilapia steaks restructured with microbial transglutaminase. Polyphosphate (0.4%), condiment mixes-onion powder and garlic powder (2.5%), water (10.0%), transglutaminase (1.0%), and different types of salts (1.5%) were mixed with non-commercial sized fillets. Substitution of NaCl by KCl or MgCl2 (at 50% each) affected quality attributes and decreased (P < 0.05) consumer acceptability. The tri-salt steaks (KCl, MgCl2, and NaCl at 1:1:2 ratio) improved some attributes and increased (P < 0.05) acceptability and purchase intention. We conclude that potassium and magnesium chlorides are possible replacers of salt (NaCl) in restructured tilapia steaks and potentially decrease the risk factor for heart failure associated with high sodium consumption.

The thermal dehydration of sodium carbonate monohydrate (SC-MH) exhibits kinetic characteristics that are typical of the thermal decomposition of solids with a reversible nature. One of the characteristics is the physico-geometrical constraints of the reaction due to the heterogeneous reaction feature. The study investigated the impact of low-dose sodium nitrite on yak meat color and mitochondrial functional characteristics during the wet curing. The results showed that sodium nitrite significantly enhanced the redness ( value) of yak meat by increasing the activities of mitochondrial complexes I, II, III and IV, which are critical for electron transport and aerobic respiration. Additionally, sodium nitrite reduced mitochondrial swelling and membrane permeability, and slowed the production of lipid oxidation products, indicating protective effects against mitochondrial damage and preserving mitochondrial integrity.

This study evaluates the removal of chlorpyrifos (CPS) using sugarcane bagasse-based biochar alginate beads in a continuous fixed-bed adsorption column, achieving a remarkable 95-98% removal efficiency. Compared to conventional adsorbents like activated carbon, which typically show CPS adsorption capacities ranging from 50-70 mg g⁻ under similar conditions, the biochar alginate beads demonstrate better performance with a sorption capacity of 91.
