In recent years, the interest in studying modification of pectin has increased. A number of hydroxyl and carboxyl groups distributed along the backbone as well as a certain amount of neutral sugars presented as side chains make pectin capable of preparing a broad spectrum of derivatives. By forming pectin derivatives, their properties may be modified and some other new functional properties may be created. This article attempts to review the information about various methods used for pectin modification, including substitution (alkylation, amidation, quaternization, thiolation, sulfation, oxidation, etc.), chain elongation (cross-linking and grafting) and depolymerization (chemical, physical, and enzymatic degradation). Characteristics and applications of some pectin derivatives are also presented. In addition, the safety and regulatory status of pectin and its derivatives were reviewed.

New quaternary ammonium derivatives (quats) based on apple pectin (PA) were synthesized by the chemical modification of native polysaccharides with various quaternization mixtures containing epichlorohydrin (ECH) and a tertiary amine. Pectin derivatives (QPAs) were studied by elemental analysis, conductometric titration, Fourier-transform infrared spectroscopy (FTIR), and C nuclear magnetic resonance (C NMR). Viscosity measurements enabled the evaluation of the viscosity average molar mass (M) for the unmodified polysaccharide, as well as its intrinsic viscosity ([η]) value.

Prolamin, a class of plant protein mainly derived from grains, and pectins, complex-structured polysaccharides, are natural biological macromolecules with versatile functional properties. The interactions between prolamins and pectin have been widely studied and applied, demonstrating that both covalent and non-covalent interactions play pivotal roles in the formation of prolamin-pectin complexes. These interactions impart exceptional physicochemical and functional properties to the complexes.

Carbohydrate-based cell wall signaling impacts plant growth, development, and stress responses; however, how cell wall signals are perceived and transduced remains poorly understood. Several cell wall breakdown products have been described as typical damage-associated molecular patterns that activate plant immunity, including pectin-derived oligogalacturonides (OGs). The intestine harbors a community of bacteria that is intestinal microbiota, which is a complex and highly diverse community. This review discusses the gut microbiota in piglets, including the role of intestinal homeostasis in maintaining piglet health and the various factors that influence gut microbiota. Nutritional interventions, particularly the supplementation of plant-derived polysaccharides, including dietary fiber, for weaned piglets have been shown to enhance the abundance and colonization of beneficial intestinal microbes, reduce the incidence of gastrointestinal infections, and decrease the frequency of diarrhea, thereby improving gut health and growth performance.
