Micronutrient deficiencies remain a great public health challenge worldwide with iron, zinc, and vitamin A being the most problematic. It has been shown that biofortification through agronomic strategies can increase their micronutrient content, but data on the bioavailability remain limited. In Senegal, consumption of cereals and legumes is high, and orange-fleshed sweet potato (OFSP), rich in β-carotene, has been introduced a decade ago.

β-Carotene (βC), a natural carotenoid, is the most important and effective vitamin A precursor, known also for its antioxidant properties. However, its poor water solubility, chemical instability, and low bioavailability limit its effectiveness as an orally delivered functional nutrient. Nanoparticle encapsulation improves βC's bioaccessibility by enhancing its stability and solubility.

In recent years, functional foods have attracted increasing attention due to growing health consciousness. When functional food ingredients are poorly water-soluble, they largely fail to be absorbed due to their low solubility in the digestive tract, limiting their ability to exert their functions. To develop poorly water-soluble compounds into viable functional food ingredients, it is important to increase their gastrointestinal absorption so that they can fully exert their functions, and to ensure their safety and efficacy through ADMET research.

This study analyzed the nutritional composition, bioactive compounds, antioxidant activities and estimated potential renal acid load (PRAL) score of orange-fleshed sweet potato (OFSP) grown in Vietnam. In addition, important functional groups of carotenoid compounds in OFSP were identified by Fourier transform infrared spectroscopy (FTIR); carotenoid pigments were detected and quantified by high-performance liquid chromatography (HPLC). The results showed that, OFSP had outstanding physicochemical characteristics, containing many nutrients, bioactive substances, minerals and fiber.
