Objectives: To identify behavior theory-based strategies to improve compliance with daily multiple micronutrient supplementation (MMS) among rural Ghanaian women.
Methods: Components of a multi-theoretical framework were investigated in focus groups of reproductive-aged women in 6 communities.
Results: Participants were generally unaware of MMS' purpose. Perceived benefits included better health and stimulated appetite, which some believe escalates food purchases and financial constraints. Cost, forgetfulness, and unsustainability were also perceived barriers. Facilitators for compliance incorporated initial visual reminders and daily announcements with reinforcement using the 'keeper' system.
Conclusions: Application of a tailored health behavioral model can effectively guide the design, implementation and evaluation of community-based MMS interventions.

In the present study, we analyzed the bioactive curcuminoids content in eight capsules (DS-1-DS-7 and DS-9), one tablet (DS-8), three ground turmeric samples (DS-10-DS-12), and three ground turmeric rhizomes (TR-1, TR-2, and TR-3). Initial screening with infrared and ultraviolet-visible spectroscopy coupled with a principal component analysis (PCA) revealed distinct differences between the samples analyzed. Hence, targeted and untargeted analyses were performed using ultra-high-performance liquid chromatography and gas chromatography coupled with mass spectrometry detections.

This study investigated the progressive structural changes of fish gelatin in thermally reversible (TR) and irreversible (TI) states, formed through microbial transglutaminase (MTGase) cross-linking during in vitro gastric digestion. The focus was on dynamic structural changes and gastric digestion characteristics. Free amino content and SDS-PAGE analyses showed that both TR and TI groups were hydrolyzed into smaller fragments by pepsin during digestion.
