Two novel heteroacenes 2,3,9,10-tetra(furan-2-yl)-1,4,8,11-tetraaza-6,13-dioxapentacene (FAOP, 1) and 2,3,9,10-tetra(thiophen-2-yl)-1,4,8,11-tetraaza-6,13-dioxapentacene (TAOP, 2) was successfully synthesized through a one-step condensation reaction, which have been fully characterized by (1)H NMR (nuclear magnetic resonance), (13)C NMR, FT-IR (Fourier transform infrared spectroscopy), and HRMS (high-resolution mass spectrum). The sandwich-structure memory devices have been fabricated using FAOP (1) and TAOP (2) as active layers, showing a typical bipolar resistive switching (RS) behavior in positive and negative regions.

Traditional cereal vinegars are fermented by microorganisms that are spontaneously enriched, leading to uncertainty in regulating the fermentation process and flavor. The objective of this study was to elucidate the impact of the predominant microorganisms, provenly and , on the solid-state fermentation (SSF) and flavor profile of cereal vinegar by several bioaugmentation strategies. The results indicated that the sequential bioaugmentation of predominant microorganisms improved the utilization of raw material and most key flavor compounds.

Ningxia Goji Berry Wine (NGBW), a traditional Chinese fermented beverage, exhibits complex flavor quality changes during fermentation, the mechanisms of which remain insufficiently elucidated. Ya'an Tibetan tea, a dark tea with a rich historical heritage, is typically processed using two primary piling fermentation methods: wet piling with rolled leaves (moisture content around 60%) and dry piling with sun-dried or baked green tea leaves (moisture content below 30%). This study employed sensory evaluation, targeted and non-targeted metabolomics, and fungal Internal Transcribed Spacer (ITS) sequencing to investigate changes in quality components and fungal composition in Tibetan tea processed by both wet and dry-piling methods. The results revealed that 3,7-Dimethyl-1,5,7-octatriene-3-ol and D-limonene were identified as key volatile metabolites contributing to the aroma variations between the dry and wet-piled teas.

Mixed fermentation can enhance the flavor and aroma of fruit wine, but the mechanisms driving this enhancement remain unclear. This study used non-targeted metabolomics to analyze the effects of mixed versus single fermentation on plum wine flavor. The results showed that compared with single fermentation, mixed fermentation reduced ethanol content and the ability to consume reducing sugars.

While the highest-performing memristors currently available offer superior storage density and energy efficiency, their large-scale integration is hindered by the random distribution of filaments and nonuniform resistive switching in memory cells. Here, we demonstrate the self-organized synthesis of a type of two-dimensional protonic coordination polymers with high crystallinity and porosity. Hydrogen-bond networks containing proton carriers along its nanochannels enable uniform resistive switching down to the subnanoscale range.
