Bioaccessibility of four essential (Fe, Cu, Mn, Zn) and two toxic (Cd, Pb) elements in kernels of four walnut and four hazelnut cultivars was investigated using sequential enzymolysis approach and atomic absorption spectrometry. It was found that the assimilable part of elements was not dependent on nut cultivar. The bioaccessible fraction of Cu, Mn, and Zn was definitely higher for hazelnuts (62% Cu, 39% Mn, 58% Zn) than for walnuts (14% Cu, 21% Mn, 15% Zn). Bioaccessible Fe was 20-24% from its total content for both nut types. Solubility in the simulated intestinal juice is affected by both formation of stable soluble complexes and back sorption of dissolved elements on nut solid residues. Lead shows strong insolubility due to the high sorption affinity of lead ions to the insoluble fraction of nuts. Thus, walnuts and hazelnuts could act as effective biosorbents for lead detoxication.

Unlabelled: Due to the structural diversity and complex mechanisms of action of bioactive peptides, screening for specific functional peptides is often challenging. To efficiently screen bioactive peptides with antioxidant and anti-inflammatory effects from bovine hemoglobin, we employed bioinformatics methods to perform virtual enzymatic hydrolysis using online tools and predicted the bioactivity, toxicity, and sensitization scores of the resulting peptides. Molecular docking and molecular dynamics simulations with Keap1 and TLR4 were subsequently conducted to screen for antioxidant and anti-inflammatory peptides.

The palatability of protein-based food heavily relies on aminopeptidases with the ability for bitter peptides degradation. However, there is a lack of methods for rational mining of aminopeptidases toward different proteins as well as the evolution direction for substrate specificity remaining unclear. In this study, an in silico simulated enzymolysis-based method for aminopeptidases mining was developed with protein as a model.

In this work, a miniaturized and sustainable method for the determination of endocrine-disrupting bisphenols in human serum and urine employing the miniaturized stir bar sorptive dispersive microextraction (mSBSDME) approach has been developed. As bisphenols are conjugated in the human body to their glucorinated and sulfated forms, an enzymolysis employing a commercial mixture of β-glucuronidase and arylsulfatase was carried out prior to the microextraction procedure to determine their total content. A magnetic covalent organic framework (COF) was employed as the sorbent to carry out the extraction of the analytes from the biological matrixes, showing good extraction performance due to its hydrophobic, π-π, and dipole-dipole interactions with the analytes.

The cost of enzymolysis is a major bottleneck for the industrialisation of lignocellulosic enzymatic hydrolysis technology, and recycling cellulase can reduce this cost. Herein, a sulfobetaine prepolymer (CPS) with terminal chlorine was grafted onto enzymatic hydrolysis residual lignin (EHL) from corncob to construct thermosensitive lignin-based "molecular glues" (lignin-based sulfobetaine polymers, L-CPS) that were used to recover and recycle cellulase. L-CPS (1.

Objective: This study compared the effectiveness of various cleaning approaches, including spray rinsing, repreparing with diamond burs, and using phosphoric acid or sodium hypochlorite alone or with polyphenols (resveratrol or myricetin), in removing blood contamination from the dentine after adhesive light-curing.
Methods: The contact angles of the treated surfaces were measured and scanning electron microscopy/ energy dispersive X-ray spectroscopy observation was performed. The bond strength and nanoleakage were assessed, and in situ zymography was performed before and after aging.
