Biogenic amines in low- and reduced-fat dry fermented sausages made with konjac gel (KG) as pork backfat replacer were studied. An increase (P < 0.05) was observed in the microbial count during the fermentation process, reaching levels of over 8 Log cfu/g of total viable microorganisms and lactic acid bacteria. However, no significant differences were observed in the microbiota evolution as a function of the reformulation process (fat and konjac gel content). High levels of physiological amines (spermidine, spermine, and agmatine) were observed in the raw material. From day 2 of the fermentation process an increase (P < 0.05) was observed in tyramine and putrescine, which were the predominant amines at the end of the storage period. The increase in these amines was proportional to the presence of KG and fat reduction. This can also be seen for spermine, with agmatine showing the inverse. The biogenic amine levels in these products reformulated with KG are not considered to pose a health risk to consumers.

This study proposed a hydrogel system using mung bean protein isolate (MPI) and carboxymethyl konjac glucomannan (CKGM). The effects of CKGM addition on the gel properties, structural characteristics, and Na loading capacity of the MPI-CKGM system were investigated. The ternary complex effectively prevents droplet aggregation, Ostwald ripening, and phase separation through its gel network, thereby demonstrating its capability in bioactive compound delivery. In this work, the influence of varying chickpea protein isolate (CPI) levels on the microstructure, gel characteristics, stability and functional properties of grape seed proanthocyanidin (GSP) and konjac gum (KGM) stabilized ternary complexes was investigated. Visual appearance indicated the formation of a non-stratified ternary complex as the CPI enhanced to 3-4 %.

Konjac glucomannan (KGM) undergoes deacetylation in alkaline conditions, while κ-carrageenan (CRG) is sensitive to potassium ions. This study examines the influence of KCO on the mechanical properties of KGM/CRG-based camellia oil Pickering emulsion gels. Texture analysis and rheological testing revealed that the addition of KCO significantly enhanced the mechanical properties of emulsion gels.
