Recent studies suggest that α-L-fucosidases of glycoside hydrolase family 29 can be divided into two subfamilies based on substrate specificity and phylogenetic clustering. To explore the validity of this classification, we enzymatically characterized two structure-solved α-L-fucosidases representing the respective subfamilies. Differences in substrate specificities are discussed in relation to differences in active-site structures between the two enzymes.

This research aimed to identify the presence of BCM7, BCM6, and BCM5 in different bovine milk-deriving blue cheese types and to describe the intricate mechanisms behind their formation, focusing on their origin from cheese with β-CN A1 and A2 variants. Using nanoLC-ESI-Q-Orbitrap-MS/MS and advanced computational tools, we explored the peptidomes of Bleu d'Auvergne, Gorgonzola, Stilton, and Bergader blue cheeses from milk containing both β-CN A1 and A2 variants.

Anthocyanins are a type of water-soluble pigments widely distributed in colorful plants, which have been extensively used in food and cosmetics industry. The current production of anthocyanins heavily depends on extraction from plant materials, which leads to low purity and inconsistency among batches. Compared with conventional extraction, microorganism-mediated production of anthocyanins has advantages such as a short production cycle, high purity, low waste production, low energy requirements, and consistency between different batches.
