Although odour perception impacts food preferences, the effect of genotypic variation of odorant receptors (ORs) on the sensory perception of food is unclear. Human OR7D4 responds to androstenone, and genotypic variation in OR7D4 predicts variation in the perception of androstenone. Since androstenone is naturally present in meat derived from male pigs, we asked whether OR7D4 genotype correlates with either the ability to detect androstenone or the evaluation of cooked pork tainted with varying levels of androstenone within the naturally-occurring range. Consistent with previous findings, subjects with two copies of the functional OR7D4 RT variant were more sensitive to androstenone than subjects carrying a non-functional OR7D4 WM variant. When pork containing varying levels of androstenone was cooked and tested by sniffing and tasting, subjects with two copies of the RT variant tended to rate the androstenone-containing meat as less favourable than subjects carrying the WM variant. Our data is consistent with the idea that OR7D4 genotype predicts the sensory perception of meat containing androstenone and that genetic variation in an odorant receptor can alter food preferences.

Ya'an Tibetan tea, a dark tea with a rich historical heritage, is typically processed using two primary piling fermentation methods: wet piling with rolled leaves (moisture content around 60%) and dry piling with sun-dried or baked green tea leaves (moisture content below 30%). This study employed sensory evaluation, targeted and non-targeted metabolomics, and fungal Internal Transcribed Spacer (ITS) sequencing to investigate changes in quality components and fungal composition in Tibetan tea processed by both wet and dry-piling methods. The results revealed that 3,7-Dimethyl-1,5,7-octatriene-3-ol and D-limonene were identified as key volatile metabolites contributing to the aroma variations between the dry and wet-piled teas.

In order to study the change rule of freshness and acid ions in reconstituted tobacco slurry, the content changes of 17 organic acids and 5 inorganic anions in reconstituted tobacco slurry with different residence times under confined condition were determined by on-line solid-phase extraction ion chromatography in this study. The results showed that the changes of acetic acid, nitrate ion and isovaleric acid in different reconstituted tobacco slurries with oscillation time were regular and consistent, and the trends of the changes of acetic acid, nitrate ion and isovaleric acid in different reconstituted tobacco slurries with oscillation time were correlated with each other in a highly significant way. Taking the evaluation of olfactory aroma and sensory quality qualities of reconstituted tobacco pulps with different residence times as a benchmark, it was found that the variation patterns of nitrate ions and isovaleric acid in reconstituted tobacco pulps with oscillation time were consistent with the variation patterns of olfactory and sensory qualities in the process of closed oscillation; compared with the fresh pulp, the olfactory aroma and sensory qualities of tobacco pulps had unpleasant odours appearing when the content of nitrate ions was reduced by about 48%.
