Antioxidants are the essential defense mechanism to protect the body against free radical damage. The objective of the study was to investigate the in vitro antioxidant activity of different parts of Withania somnifera (leaves, fresh tubers and dry tubers) towards free radical DPPH and the extent of inhibition of lipid peroxidation using hydrogen peroxide as prooxidant. The plant extracts exhibited significant antioxidant effect in the order as follows: leaves>fresh tubers>dry tubers. The results suggested that Withania somnifera could be a potential source of antioxidants and may be used in preparations to combat free radical mediated damage.

Health benefit effects of bioactive compounds depend on their bioavailabilities, which could vary according to factors including food matrix and digestion environment. To understand the "bioaccessible" health benefit of red pitay pulp, the INFOGEST static in vitro simulation of gastrointestinal (GI) digestion model and targeted metabolomics method were applied to unravel the fates of bioactive compounds in the whole food of red pitaya pulp during GI digestion. The antioxidant activity as one of the health benefit indices was also assessed to compare the changes in bioactive properties of red pitaya pulp.

A lipophilic piceid lipoate (PIL) was synthesized by enzymatic method to enhance the antioxidant activity of piceid and improve its state in oil system. The highest substrate conversion of 93.71 % was obtained in γ-valerolactone using Novozym 435 as a catalyst, with a piceid/lipoic acid ratio of 1:15 (mM/mM), an enzyme dosage of 40 mg/mL, and 4 Å molecular sieves at 400 mg/mL.

Most photosensitizers have limited responsiveness to visible light, however, visible light is a light source with a wide range of wavelengths and the most common in daily life, and making full use of visible light can help to enhance the photodynamic antimicrobial properties of photosensitizers. To tackle this issue, this study confirmed that alizarin has a good absorption capacity for visible light by UV-DRS analysis. Theoretical calculations showed that alizarin might be excited through the charge transfer (CT) mechanism.
