Near-infrared spectroscopy is a rapid screening technique that may be used to determine meat quality traits. While several calibrations on meat quality parameters have been published, the accuracy and robustness of a calibration has rarely been validated with independent samples. In this study, in 207 loin muscles from three independent batches of pigs of different breeds drip loss, colour values, pH and intramuscular fat were determined. Calibrations were made from each combination of two batches and validated with the third batch. Validations of pH, intramuscular fat, drip loss, and L(∗), a(∗), and b(∗) colour values had on average 1.27 times the accuracy of the calibration. Breed did not influence the accuracy of the calibration. Intramuscular fat can be determined with good accuracy. Muscle pH and colour values are reasonably well predicted. Drip loss can not be determined quantitatively with sufficient accuracy, but classification of quality groups is possible.

In this study, broilers were selected as the research object to investigate the effects and mechanisms of dietary gallic acid (GA) supplementation on growth performance, meat quality, antioxidant capacity, and muscle fiber-related gene expression. A total of 750 one-day-old healthy 817 male crossbred broiler chickens were divided into five treatment groups, with six replicates per group. Meat quality is a complex trait that exhibits significant variation across pig breeds, and the regulatory mechanisms governing pork meat quality are not fully elucidated. We compared the transcriptomics and metabolomics of the longissimus dorsi (LD) muscle between the Songliao Black Pig (SBP) and Large White × Landrace Pig (LWLDP) to investigate breed-specific differences in meat quality and underlying regulatory pathways. The results showed that SBP meat had a higher marbling score and backfat thickness, a richer color, a lower shear force, and reduced drip loss.

Chilled beef is a perishable food product. Due to the broad-spectrum antimicrobial properties of chitosan, and the biodegradability of PLLA, chitosan and PLLA are introduced double bonding groups to obtain Chitosan-graft-Glycidyl methacrylate (Cs-g-GMA) and Poly(L-lactic acid)-co-poly(butylene itaconate) (PLBI), respectively. Cs-g-GMA is then grafted onto the surface of PLBI films by UV curing to produce PLBI/Cs-g-GMA films with non-migratory, broad-spectrum antimicrobial, biodegradable, and possess good oxygen barrier properties, compared to current antimicrobial films.
