Salting, is one of the fundamental operations in Spanish cured ham manufacturing, and is basic in order to preserve the product throughout its processing and storage. Pile salting is the method traditionally employed to accomplish this step. The use of frozen raw material has become quite frequent in the industry, and it implies a preliminary thawing step in a cold chamber. The aim of this study is the analysis of the first step in ham production (salting) and the influence of simultaneous brine thawing/salting and vacuum impregnation in the salting stage of Spanish cured ham. The results indicated a reduction in the salting time when using the brine thawing/salting method, which was performed together with vacuum impregnation. Further studies need to be done in order to fully understand the influence of these new salting methods on the following manufacturing steps and the final quality characteristics.

LC3 (limestone calcined clay cement) is poised to become the construction industry's future as a so-called low-carbon-footprint cement. Research into this subject has determined the minimum kaolinite content in calcined clays to guarantee good mechanical performance. This study examines the use of clay from the Valencian Community (Spain), which has a lower kaolinite content than the recommended amount (around 30%) for use in LC3 and how its performance can be enhanced by replacing part of that clay with metakaolin.

This study investigates the relationship between microbial diversity and the changes in physicochemical properties and non-volatile flavor compounds of dry-cured Spanish mackerel (DCSM) throughout the curing process. Purpose Of Review: To summarize the heterogeneity in the elite controllers population with the aim to identify a compatible profile with a persistent HIV remission, making distinction between persistent elite controllers, people with HIV (PWHIV) who permanently maintain virological control in the absence of antiretroviral treatment (ART), and transient elite controllers, PWHIV who eventually lose virological control. For this purpose, it is important to consider the mechanisms and biomarkers that have previously been associated with the maintenance and loss of the natural virological control.
Recent Findings: Transient elite controllers, before losing virological control, exhibit a distinct metabolomic, proteomic, microRNAs (miRNA), immunological and virological profile compared to persistent elite controllers.
