An oleaginous fungus, Mortierella isabellina, able to transform efficiently sugar to storage lipid, was used as a model microorganism which develops a biofilm structure during the semi-solid fermentation process for the production of biodiesel from sweet sorghum. A mathematical model was developed to describe the fungal oil production in M. isabellina biofilm. The model describes diffusion and consumption of sugars and nitrogen of sweet sorghum and single cell oil production in a biofilm, which grows according to the kinetics of double-substrate limitation (sugars and nitrogen) with sugar inhibition. Experimental data from a previous experimental study were used to determine the kinetic parameters of the model. Maximum biofilm thickness and the percentage of lipid inside the biofilm were estimated using the model at 1892 μm and 15%, respectively. The proposed mathematical model could prove a useful tool for designing semi-solid fermentation processes.

The study focused on rhamnolipid production by batch fermentation of Pseudomonas aeruginosa USM-AR2 in a 3-L stirred-tank reactor (STR) using palm sludge oil (PSO) as the sole carbon source. The impact of various agitation rates towards the dispersion of PSO in the medium was evaluated to improve biomass growth and rhamnolipid production. A mechanical foam collection and recycling system was designed and retrofitted to the STR to overcome severe foam formation during fermentation.

Wood-decaying white rot fungi live in changing environmental conditions and may switch from aerobic to fermentative metabolism under oxygen depletion. Decomposition of wood and lignocellulose by fungi is dependent on enzymatic and oxidative biochemistry including generation of reactive oxygen species. In this study, we subjected semi-solid wood-substrate cultures of the white rot fungus to oxidative stress by addition of hydrogen peroxide under aerobic and anaerobic cultivation conditions.

To expand the development of characteristic extension products of Yunnan tea and improve the utilization rate of Yunnan tea resources, in this study, we compared the metabolite composition among raw Pu-erh tea, ripe Pu-erh tea prepared with glutinous rice (according to tea to glutinous rice ratio of 1:3), and ripe Pu-erh tea prepared with a mixture of sorghum, rice, glutinous rice, wheat, and corn as raw materials (according to a tea to glutinous rice ratio of 1:3). Rice flavor liquor prepared with 100% glutinous rice served as a control. The raw Pu-erh tea liquor (RAWJ), ripe Pu-erh tea liquor (RIPEJ), ripe Pu-erh tea mixed grain liquor (HHLSJ), and rice-flavor liquor (MJ) were all brewed by semi-solid fermentation.

Biopolymer hydrogels have a broad range of applications as soft materials in a variety of commercial products, including foods, cosmetics, agrochemicals, personal care products, pharmaceuticals, and biomedical products. They consist of a network of entangled or crosslinked biopolymer molecules that traps relatively large quantities of water and provides semi-solid properties, like viscoelasticity or plasticity. Composite biopolymer hydrogels contain inclusions (fillers) to enhance their functional properties, including solid particles, liquid droplets, gas bubbles, nanofibers, or biological cells.
