Growing evidence indicates that the intake of trans-fatty acids (TFAs) has been associated with a higher risk of cardiovascular disease; therefore, various industrial measures have been taken to reduce the amount of TFAs consumed. However, research on TFAs formed during cooking is limited. Isothiocyanates and polysulfides, which are widely distributed in various vegetables, have recently been shown to promote the cis-trans isomerization of double bonds.

Purpose Of Review: High blood pressure (BP) or hypertension (HTN) remains key risk factors for cardiovascular disease (CVD). Circulating fatty acids (FAs) in the blood can affect directly cardiovascular hemodynamics and serves as building blocks for endocrine mediators modifying inflammatory processes and vascular function. This review aims to describe optimal circulating FA profiles for BP to adjust dietary recommendations for HTN prevention.

The simplest way to reduce the level of fatty acids is to block their synthesis or increase the rate of their degradation. This review provides an overview of the main vegetable oils of different botanical origin and composition that can be used for frying worldwide (olive and extra-virgin olive oil, high-oleic sunflower oil, rapeseed oil, peanut oil, rice bran oil, sunflower oil, corn oil, soybean oil, cottonseed oil, palm oil, palm kernel oil and coconut oil) and their degradation during this process. It is well known that during this culinary technique, oil's major and minor components degrade throughout different reactions, mainly thermoxidation, polymerization and, to a lesser extent, hydrolysis. If severe high temperatures are employed, isomerization to fatty acyl chains and cyclization are also possible.

Methods: Children aged 6-16 years were enrolled from randomly selected urban schools in 10 cities. The International Study on Asthma and Allergies in Childhood Phase III Questionnaire was used to assess the prevalence of asthma.
