Dysfunction of taste perception is a significant problem for many individuals. Taste anomalies may affect health not only by directly affecting liquid and solid food intake, but also by creating a state of depression due to the loss of an important source of pleasure. Many factors alter taste perception, such as lesions of the oral mucosa, cigarette smoking, radiation, chemotherapy, renal disease, hepatitis, leprosy, hormones, nutrition, use of dentures, medications, and aging. Gum or ice chewing may temporarily help loss of taste. Patients should be encouraged to chew their food thoroughly, alternating the sides of the mouth, or alternating different foods. Unfortunately, in many cases there is no cure for this alteration, and patience is then the only possibility.

Background: According to the ICOP 2020, burning mouth syndrome (BMS) is a chronic orofacial pain disorder characterised by an intraoral burning sensation, which represents the main diagnostic criterion. However, some patients experience other symptoms such as xerostomia, taste alterations and globus, without the burning sensation (non-BMS).
Objective: This study aims to explore non-BMS as a distinct subclinical entity by comparing the classical BMS with this new group of patients in a case-control study, addressing gaps in current diagnostic criteria.

Our lab previously established that repeated exposure to a bitter diet can increase salivary protein (SP) expression, which corresponds to an increase in acceptance of the bitter stimulus. However, this work was exclusively in male rodents, here we examine sex differences. We found that there are no differences in SP expression (experiment 1) or quinine diet acceptance (experiment 2) across stage of estrous cycle.

Blackberry can be considered a source of phenolic compounds with antioxidant properties, especially anthocyanins, which are responsible for the attractive color of the juice. However, blackberry juice quality can be reduced under severe heat treatments, resulting in darkened color and altered taste. Membrane separation processes are an alternative for the clarification and concentration of fruit juices, with advantages as the maintenance of the nutritional, sensory, and functional characteristics of the product.

Malnutrition is a significant concern for head and neck cancer (HNC) patients, as treatment often impairs mastication, causes dysphagia, and alters taste and smell, leading to reduced food intake and a diminished quality of life. Thus, this study aims to compare nutritional intake in HNC survivors using maxillofacial prostheses (MFPs) to healthy reference values and identify the factors influencing their dietary intake. The study included 56 patients treated for HNC undergoing rehabilitation with comfortable definitive dentures for over a month at the Maxillofacial Prosthetics Clinic of Tokyo Medical and Dental University Hospital.
