Ascorbyl tetraisopalmitate (VC-IP) is a novel form of ascorbic acid characterized by reduced water solubility due to complete acylation with palmitate. This study investigated the potential cosmetic application of VC-IP when encapsulated in lyotropic liquid crystal nanoparticles (VC-IP LCNPs) by using a high-pressure homogenization (HPH) method. The particle size, zeta potential, and polydispersity index (PDI) of the obtained VC-IP LCNPs were determined as 158.

This study examines the complex interactions between wheat cultivar selection and fortification with NaFeEDTA and ascorbic acid (AA) on the bioavailability of iron (Fe) and zinc (Zn) in whole wheat flour (WWF) and chapati. Nineteen hexaploid wheat cultivars were rigorously assessed for their intrinsic Fe and Zn profiles, including total content (TC), solubility (S), and bio-accessibility (B), utilizing an in-vitro gastrointestinal model. Significant variations (P < 0.

January 2025

Centro Interdisciplinario de Investigaciones en Tecnologías y Desarrollo Social para el NOA (CIITED), Facultad de Ingeniería, Universidad Nacional de Jujuy and Consejo Nacional de Investigaciones Científicas y Técnicas (CONICET), Jujuy, Argentina.

The mineral content, vitamin C, and chlorogenic acid were determined in 44 genotypes of Andean potatoes reintroduced in the Quebrada de Humahuaca, Jujuy, Argentina. This initiative aims to promote biodiversity and support local producers by determining the nutritional and functional properties of these genotypes. The genotypes from a collection in the Germplasm Bank of INTA Balcarce, were planted in sandy clay loam soils and harvested manually.
