An experimental investigation was carried out to study the evolution of the volatile compounds of ripened sausages as a function of both storage time (time) and composition of packaging atmosphere (MAP). Ripened sausages, prepared at an industrial plant, were packed applying three different atmosphere compositions and were stored for three months. The obtained data evinced that the evolution of the volatile compounds was significantly related to the variable time more than to the variable MAP. The main volatile compounds were those derived from spices. Among them, Δ3-carene was the most abundant and a significant decrease was observed during storage (p<0.05). The volatile compounds derived from lipid autoxidation showed generally a significant increase during storage, suggesting the raise of lipid oxidation also at low oxygen concentration. Moreover, octanal and nonanal were significantly influenced by the atmosphere composition, with the highest values in samples packed at the lowest CO2 concentration.

This study aimed to employ a multi-omics method to identify key compounds contributing to the sensory flavour of mutton and to investigate the internal correlation between volatile metabolites and lipids in Cashmere goats and Tan sheep. The results demonstrate that the electronic nose can effectively and quickly distinguish goats and sheep meat. A total of 18 volatile metabolites and 314 lipids were identified as significant contributors to the flavour difference between goats and sheep meat, as determined by HS-SPME-GC-MS and lipidomic respectively.

Aiming to enable online freshness-monitoring of meat within modified-atmosphere package, we developed a ratiometric array that was fluorescently responsive to volatile organic compounds-ammonia (NH) released by protein decaying. The array was consisted of two 3 mm × 6 mm rectangles precisely and uniformly printed with fluorescein isothiocyanate (FITC) as indicator and rhodamine B (RhB) as internal reference on the filter-paper, respectively. The fluorescence intensity of the array area was calibrated according to Green/Red ratio of the digitalized pixels extracted from images facilitated by a smartphone.
