Combinatorial peptide ligand libraries (CPLLs) have been adopted for harvesting and identifying traces of casein (used as a fining agent) present in white wines. Although minute amounts (200 microL) of CPLL beads are added to the entire content of a wine bottle (750 mL), they are able to sequester with high efficiency (up to 80%) residual traces of casein, permitting a signal "amplification" of at least 5000-fold. It is here demonstrated that as little as 1 microg/L of casein can be efficiently detected in white wines, a major improvement over previous investigations in which the lower detection limit had been estimated at 100 microg/L. The fact that such very low levels of fining agents can still be detected in treated white wines should be taken into consideration by winemakers in labelling their products and by EC rulers in issuing proper regulations.

Background: Evidence on how beverage consumption modifies associations between air pollution (AP) exposure with the type 2 diabetes (T2D) risk remains scarce, which we aimed to investigate in this study.
Methods: A total of 77,278 adults from the UK Biobank cohort were enrolled. Annual average concentrations of fine particulate matter (PM and PM) and nitrogen oxides (NO and NO) were estimated to represent the long-term AP exposure using the land use regression model.

Grapevine white rot is a fungal disease that frequently occurs during the growing season, resulting in reduced fruit quality and severe yield losses. This work aimed to compare the differences in flavor profiles between wines made from different percentages of Coniella vitis-infected grapes by using FTIR spectrometer, sensory analysis, HS-SPME-GC-MS and HPLC-DAD. Background: Sour taste is associated with acid-base homeostasis, which is critical to cell metabolism and health conditions. Vinegar, which contains acetic acid as the main component, is a sour food considered the second most common condiment in Italy.
Objectives: The aim of the study was to assess differences in sourness perception in subjects with olfactory deficits compared to controls and evaluate myrtle aromatization's potential effect in modulating sourness perception in subjects with hyposmia.

Background: Alcohol intake is associated with a higher risk of estrogen receptor-positive (ER+) breast cancer (BC), presumably through its confirmed ability to increase sex hormone levels. Whether consuming alcohol within the recommended limit of one serving per day increases sex hormone levels among postmenopausal women taking aromatase inhibitors (AI) to inhibit estrogen production remains unknown. Therefore, we compared sex hormone levels following white wine to levels following white grape juice among ER + BC survivors taking AIs.

The use of 3D-printed electrodes is reported fabricated from in-house conductive filament composed of a mixture of recycled poly (lactic acid) (rPLA), graphite (Gpt), and carbon black (CB) for fast detection of the abused drug ketamine. Firstly, the performance of these electrodes was evaluated in comparison to 3D-printed electrodes produced employing a commercially available conductive filament. After a simple pretreatment step (mechanical polishing), the new 3D-printed electrodes presented better performance than the electrodes produced from commercial filament in relation to peak-to-peak separation of the redox probe [Fe(CN)]/ (130 mV and 759 mV, respectively), charge transfer resistance (R = 1.
