Salinization poses a significant challenge in agriculture. Identifying salt-tolerant plant germplasm resources and understanding their mechanisms of salt tolerance are crucial for breeding new salt-tolerant plant varieties. However, one of the primary obstacles to achieving this goal in crops is the physiological complexity of the salt-tolerance trait.

Nitrogen fertilizer delivery inefficiencies limit crop productivity and contribute to environmental pollution. Herein, we developed Zn- and Fe-doped hydroxyapatite nanomaterials (ZnHAU, FeHAU) loaded with urea (∼26% N) through hydrogen bonding and metal-ligand interactions. The nanomaterials attach to the leaf epidermal cuticle and localize in the apoplast of leaf epidermal cells, triggering a slow N release at acidic conditions (pH 5.

Wheat gluten is a by-product of the wheat starch industry, rich in bioactive peptides. Spray drying is an effective method for improving the stability of bioactive compounds. So, the aim of this study was to produce gluten hydrolysate by different proteases (alcalase, pancreatin, and trypsin) at different times (40-200 min).

In this study, the potential of using an emulsion gel based on whey protein concentrate (WPC) and pullulan (PUL) to encapsulate and deliver astaxanthin (AST) was investigated. PUL concentration was observed to affect the microstructure of WPC/PUL/AST emulsion gels, and the performance of emulsion gels was evaluated by encapsulation efficiency, simulated gastrointestinal digestion, storage stability, hardness, and water holding capacity tests. The WPC/PUL/AST emulsion gels had the highest encapsulation efficiency, gastrointestinal digestion retention, and bioaccessibility of (91.

Article Synopsis
  • The study explored using drum-dried overripe Kepok plantain flour (KPF) as a substitute for wheat flour in instant noodles to improve their nutritional and textural properties.
  • Noodles with 10%, 20%, and 30% KPF substitutions showed varying effects on attributes like adhesiveness, elasticity, and cooking quality, with 20% yielding the best balance of firmness, shape retention, and reduced stickiness.
  • KPF also enhanced nutritional value by increasing resistant starch content and decreasing oil absorption, showcasing its potential as a functional ingredient for healthier instant noodles.
