A rapid method for the characterization of sake by measuring the ratio of the peak intensities of taste components in sake, using electrospray ionization/mass spectrometry (ESI/MS) has been developed. Twenty-six different kinds of sake samples were collected and analyzed by ESI/MS. The ESI/MS ion peaks were assigned to amino acids, organic acids, and sugars. Principal component analysis was performed using the respective peak intensities obtained by ESI/MS measurements. As a result, the cumulative proportion of the two first principal components was over 70%, and these components could be used for the characterization of sake.

The handstand is an exercise performed in many sports, either for its own sake or as part of physical training. Unlike the upright bipedal standing posture, little is known about the sagittal alignment and balance of the spine during a handstand, which may hinder coaching and reduce the benefits of this exercise if not performed correctly. This study examines a boreal peatland (the Sagnes peatland, Fanay, Limousin, France) with a depth of 1 m. The use of recycled aggregates in the production of concrete and mortar represents a sustainable way to reintroduce these constituents-which are typically treated as waste and disposed of-in the production chain, providing new value to potentially polluting materials. The effect of recycled aggregates has been widely studied in the production of concrete due to the directions of National Standards in Italy; however, their role in the manufacturing of mortar must be investigated further due to the high variability that can be observed in the literature. In particular, the aim of this paper is the mechanical characterization of sustainable mortars defined by different mix designs and different binders, in which the aggregates are gradually replaced by a recycled sand obtained from the grinding of construction and demolition wastes, which could include old concrete, clay bricks, and minimal amounts of other kinds of residual materials.
