Effects of acrylamide on the activity and structure of human brain creatine kinase.

Acrylamide is widely used worldwide in industry and it can also be produced by the cooking and processing of foods. It is harmful to human beings, and human brain CK (HBCK) has been proposed to be one of the important targets of acrylamide. In this research, we studied the effects of acrylamide on HBCK activity, structure and the potential binding sites. Compared to CKs from rabbit, HBCK was fully inactivated at several-fold lower concentrations of acrylamide, and exhibited distinct properties upon acrylamide-induced inactivation and structural changes. The binding sites of acrylamide were located at the cleft between the N- and C-terminal domains of CK, and Glu232 was one of the key binding residues. The effects of acrylamide on CK were proposed to be isoenzyme- and species-specific, and the underlying molecular mechanisms were discussed.

In this paper, zein-carboxymethyl starch (CMS) nanoparticles were prepared by antisolvent precipitation method to improve the stability of rutin (RT). The encapsulation efficiency, loading capacity, oxidation resistance, structural properties were evaluated. The results showed that electrostatic, hydrogen bond and hydrophobic interaction were the main driving forces for the formation of nanoparticles.

The discontinuous fiber reinforced hydrogels are easy to fail due to the fracture of the fiber matrix during load-bearing. Here, we propose a novel strategy based on the synergistic reinforcement of interconnected natural fiber networks at multiple scales to fabricate hydrogels with extraordinary mechanical properties. Specifically, the P(AA-AM)/Cel (P(AA-AM), poly(acrylic acid-acrylamide); Cel, cellulose) hydrogel is synthesized by copolymerizing AA and AM on a substrate of paper with an interconnected hollow cellulose microfiber network.

In order to solve the problems of long dissolution and preparation time, cumbersome preparation, and easy moisture absorption and deterioration during storage or transportation, acrylamide (AM), acrylic acid (AA), sodium p-styrene sulfonate (SSS), and cetyl dimethylallyl ammonium chloride (DMAAC-16) were selected as raw materials, and the emulsion thickener P(AM/AA/SSS), which can be instantly dissolved in water and rapidly thickened, was prepared by the reversed-phase emulsion polymerization method. DMAAC-16, the influence of emulsifier dosage, oil-water ratio, monomer molar ratio, monomer dosage, aqueous pH, initiator dosage, reaction temperature, reaction time, and other factors on the experiment was explored by a single-factor experiment, and the optimal process was determined as follows: the oil-water volume ratio was 0.4, the emulsifier dosage was 7% of the oil phase mass, the initiator dosage was 0.
