The influence of a new anticarcinogenic compound Cu(II)TOEPyP(4) (Cu(II)-Meso-tetra(4-N-oxyethylpyridyl) porphyrin) (the analogue of TMPy4[tetra(N-mrthyl-4-pyridyl)-porphyrin chloride] - an inhibitor of telomerase activity - on the thermostability of calf thymus DNA in vitro has been studied. It has been shown that Cu(II)TOEPyP(4) is a stronger stabilizing DNA agent, which is expressed with an increase of its thermostability by 20 degrees C. It was determined that complex formation does not disturb the DNA double-helix, and the melting enthalpy (DeltaHm) remains unchanged and it is equal to 11.6+/-1.0 cal/gDNA in the range 0.002

Introduction: This study investigated the tryptic hydrolysis of β-lactoglobulin (BLG) for 30, 60, 90, and 120 min at 1/200 E/S (enzyme/substrate ratio, w/w) to prepare potentially anticarcinogenic peptides.
Methods: The properties of hydrolysates were characterized, including degree of hydrolysis, free amino acids, SDS-PAGE, FTIR, and antioxidant activity employing DPPH-assay, β-carotene/linoleic acid, and FRAP assay.
Results: BLG tryptic hydrolysate produced after 60 min hydrolysis recorded the highest antioxidant activity, and LCMS analysis revealed 162 peptides of molecular masses ranging from 800 to 5671Da, most of them are of hydrophobic nature.

The present study aim to investigate the effects of three drying processes on the flavor-related compounds and sensory quality of summer black tea. A total of 234 flavonoids and 1200 volatile compounds were identified in tea samples by using UPLC-MS/MS and HS-SPME-GC-MS, respectively. It was found that the combining hot-air and roasting drying process increased the level of epigallocatechin, epicatechin, gallic acid, theaflavins, and umami and sweet amino acids in tea samples.

Effects of catechins with different structure characteristics on the structure and properties of gluten-catechin covalent complex were investigated, and the structure-activity relationship was further explored. Catechins including epicatechin (EC), epigallocatechin (EGC), epicatechin-3-gallate (ECG), and epigallocatechin-3-gallate (EGCG) could successfully covalently bind with gluten through C-N and/or C-S bonds. The physicochemical properties of covalent complex, including particle size, thermal stability, content of free amino groups, free sulfhydryl groups and disulfide bonds, were significantly affected by different catechins, and the action order was: EGCG > ECG > EGC > EC.
